Abstract

PURPOSE: To obtain a non-caloric food having improved heat resistance, expanding property, reconstituting property and resistance to the teeth, by mixing a solidified material, consisting of "konjak" (devil's-tongue jelly) or glucomannan essentially, and crushed and treated with an acid with an edible high polymer, and molding the resultant mixture.
CONSTITUTION: A solidified material, obtained by the conventional method, and consisting of "konjak" (devil's-tongue jelly) or glucomannan essentially is crushed and immersed in an aqueous solution of an acid, e.g. acetic acid or tartaric acid, and softened. An edible high polymer, e.g. glucomannan, agar or seaweed, is then mixed with the resultant mixture. Preferably the "konjak" (devil's-tongue jelly) is made into a paste before or after the mixing, and the resultant mixture is kneaded fully, heated and molded in a molding machine. The molded product is directly freeze-dried or immersed in an alkali, e.g. lime water or an aqueous solution of an alkaline hydroxide, and then freeze-dried.
