Abstract

PURPOSE: Soybean milk is coagulated with an acid or alkaline earth metal salt into curds, powdered to give the objective instant soybean curd, which is made into curds by adding a thickener, water and a gelling agent by no use of a heating equipment.
CONSTITUTION: After heated over 90°C for a few minutes, soybean milk is coagulated with an acid such as aldonic, uronic, citric or hydrochloric acid or an alkaline earth metal salt such as calcium carbonate or calcium sulfate to form curds. The curds are made into a fine powder, preferably of less than 50 micron particle sizes, by drying such as freeze drying, spray drying or hot-air drying. A soybean curd is obtained by mixing the powder with a thickener such as alginate salt or pectin, placing them in a vessel, adding water thereto with stirring, adding a gelling agent and standing them at room temperature for a few minutes.
