Abstract

PURPOSE: To prepare liquid fermented milk containing carbon dioxide gas, and containing a large amount of lactic component, by carrying out the lactic fermentation in a medium containing solid component of defatted milk in high concentration, cooling and homogenizing the fermented product, mixing with pectin, aging the mixture, and introducing carbon dioxide gas to the mixture.
CONSTITUTION: Lactic bacteria are inoculated in a medium prepared from milk, defatted milk, skimmed milk, etc. and having a defatted solid milk content of 12W16%, and lactic fermentation is carried out at 30W45°C. When a sufficient lactic acid is accumulated in the medium, and the whole composition becomes semi-solid, the mesium is cooled and homogenized to obtain liquid fermented milk, which is mixed with pectin, saccharides, flavors, and colorants, and aged at ≤10°C for ≥6hr. The product is carbonated to obtain the objective milk.
