Abstract

PURPOSE: To prepare a stable lactic beverage of high quality containing gaseous carbon dioxide for dilution without the bumping of the gas, by dispersing coarse aggregated particles in a fermented milk, adjusting the pH thereof, adding a glucide to the adjusted milk, and incorporating gaseous carbon dioxide therein.
CONSTITUTION: Lactic acid bacteria are added to a heat sterilized and cooled skimmilk and fermented to give a fermented milk. Water is then added to the fermented milk, and the resultant milk is then heat-treated to disperse an aggregated milk protein therein. Sodium citrate is added to the dispersion to adjust the pH to 3.3W3.7, and sugar is added to give a Brix concentration in the range of 20W35R. The mixture is then stirred thoroughly. A perfume is then added thereto, and the resultant mixture is then impregnated with gaseous carbon dioxide to give a gaseous volume of 1.5times or more in dilution. The resultant beverage is drunk by diluting to 2W4 times.
