Abstract

PURPOSE:To obtain the titled yogurt having excellent low-temperature shelf stability causing neither gassing in opening nor whey separation, by dissolving a specific amount of carbon dioxide gas in a milky raw material having a specific amount of solids in nonfat milk and subjecting the raw material to lactic acid fermentation. CONSTITUTION:0.1-2.5 volume carbon dioxide gas is dissolved in a milky raw material having 6-15% solids of nonfat milk based on sum of yogurt, which is subjected to lactic acid fermentation to give the aimed yogurt having a constant amount of carbon dioxide gas.
