Abstract

PURPOSE: To provide a powdery preparation which is miscible with a hardly water-soluble substance at an arbitrary ratio, by adding a sucrose fatty acid ester having high monoester content to a hardly water-soluble substance, dissolving the mixture in a hydrophilic solvent, and distilling out the solvent.
CONSTITUTION: 1pt.wt. of a hardly water-soluble food additive such as colorant, aromatizing agent, enriching agent, antioxidant, etc., is mixed with ≥5pts.wt. of sucrose fatty acid ester having a mono-ester content of ≥90% and containing a 14W22C saturated fatty acid as the constituent fatty acid. The mixture is dissolved in a hydrophilic solvent such as ethanol, propylene glycol, etc., the solvent is distilled out, and the residue is dried and pulverized to obtain the product.
