Abstract
PURPOSE: To obtain fat-soluble vitamin powder which is stable, handled easily, and to be readily blended with water-soluble vitamin, by adding respectively specific amounts of an emulsifying agent having a specific HLB, an alkali salt, and water-soluble protein to a fat-soluble vitamin, emulsifying, drying, and powdering it.
CONSTITUTION: A fat-soluble vitamin which may contain fats and oils is emulsified with (A) ≤10wt%, especially 3W7wt% based on the vitamin of an emulsifying agent such as glycerol fatty ester, etc. having a HLB value of ≤7.0, especially 4.0W6.0, (B) ≤5wt% alkali salt such as sodium chloride, etc. and (C) ≤25wt%, especially 5W15wt% water-soluble protein such as milk, etc., and dried and powdered, to give fat-soluble vitamin powder. The vitamin is heated at 70W80°C and dissolved in a hydrophobic emulsifying agent, water in an amount to give 1W3 times that of the vitamin is heated at 50W70°C and a hydrophilic emulsifying agent, the components B and C are dissolved in the warm water, and both the solutions are preferably blended and emulsified.
