Abstract
PURPOSE: Saccharide solution is added to polished rice and they are processed to produce rice protein and saccharide solution that is used as a raw material for brewing.
CONSTITUTION: Rice grains are stepped in the tank 4 and mixed with saccharides from the tank 2 in the tank 5 and they are impregnated with water to effect swelling. They are sent to crushers 6, 7 where they are crushed and contained in the service tank 8. The ground product is sent at a certain rate to the first heater 9 and an appropriate amount of liquefying enzyme is added from the enzyme tank 10, then they are heated up to 80°C in a short time. Further, they are sent to the second heater 11 and heated up to 94W95°C, then conveyed to the first protein coagulator 12 and the second one 13 where the protein is coagulated. Then, the product is sent to the first sieve 14 and separated into the rice protein and a solution. The rice protein is subjected to dehydration 16 and drying 17 and sent to tank 19. The solution is combined with a saccarifying enzyme in the saccharifying tank 20 where it is hydrolyzed to form a saccharide solution, which is led to tank 20.
