Abstract

PURPOSE: To prepare frozen green asparaguses with almost no change in flavor, and color, by cooling heat-treated green asparaguses, and quickly freezing the cooled green asparaguses with an inert gaseous refrigerant.
CONSTITUTION: Green asparaguses sorted and washed with water are dipped in hot water containing salt in such an amount not to salt the asparaguses for several minutes, heat-treated, quickly dipped in cooling water and cooled to a given temperture of 10°C or below. After draining, the asparaguses are then quickly frozen to -50°C or below with an inter gaseous refrigerant, e.g. nitrogen or gaseous carbon dioxide, and enclosed in an impermeable bag in a sealed condition.
