Abstract

PURPOSE: To prepare the titled gel having a texture almost equal to that of a fish- paste product obtained from a low-grade ground fish meat, by removing the endothelium and pigment cell from a muscular fiber of an invertebrate animal, washing the muscular fiber without refining with water, dehydrating and finely pulverizing the fiber, and kneading the fiber with a given proportion of common salt.
CONSTITUTION: The endothelium and pigment on the surface of an invertebrate animal, e.g. a krill, are washed with water throughly, and then, without refining with water as in the fish meat, dehydrated by a dehydrator to give a dehydrated flesh. The dehydrated flesh thus obtained is milled for 5W20min, and mixed with 3W10wt% a saccharide, e.g. sorbit, and kneaded for another 5W20min to prepare a ground flesh, which is then frozen and stored at -12°C or below. In use, the stored flesh is uniformly kneaded in a semithawed state, mixed with 0.5W8wt% common salt, mixed uniformly within 10min, and immediately molded into the aimed shape. At the time of adding common salt, the raw gel is mixed with a water retention improver, e.g. a phosphate, a moisture modifier, e.g. a vegetable protein, or an elasticity enhancer, e.g. egg white, and then heated to give a texture almost equal to that of a fish-paste product obtained from a low-grade ground fish meat.
