Abstract

PURPOSE: To prepare a valuable amino acid derivative having antioxidant action, by reacting a compound such as L-glutamic acid with a compound such as L- cysteine in an aqueous solution by the aid of microorganisms belonging to Escherichia genus, etc.
CONSTITUTION: Microorganisms belonging to Escherichia genus, Enterobacter genus, Bacterium genus, etc., e.g. Escherichia coil ATCC11246, etc. are cultured in a conventional medium by conventional process, to obtain the cultured liquid, separated bacterial cells, treated bacterial cells, etc. The enzyme liquid derived from the above bacterial cells, etc. is reacted with an aqueous solution containing L- glutamic acid, D-glutamic acid, etc., and L-cysteine, L-α-aminobutyric acid, L- methionine, etc., at 10W70°C and pH4W10. The objective amino acid derivative is separated from the reaction mixture by conventional method. An example of the reaction liquid is shown in the table.
