Abstract
NEW MATERIAL:Proline acylase wherein the amino group of L-proline is bonded to glycine, a group R or R-glycine (R is amino-protecting group), or the carboxyl group of a fatty acid.
USE: Useful as an enzyme for producing L-proline by hydrolyzing an N-acyl-L-proline.
PROCESS: Proline acylase-producing bacteria, preferably the genus Alcaligenes A-131 (FERM-P No. 4437) are cultured, and bacterium bodies obtained from the culture are mixed with a surfactant to isolate and collect the objective proline acylase.
