Abstract

PURPOSE: To prepare highly concentrated alcohol stably, by reacting an anaerobic bacterium capable of producing ethanol fixed on a gelatinous carrier with a medium comprising a fermentable enzyme and a nutrient in contact.
CONSTITUTION: A granular or filmy gel with a thickness 2mmW5cm, containing a living mold of anaerobic bacterium, capable of producing ethanol, in an amount corresponding to 0.10W10 platinum loops based on 100g gel is inoculated in a nutrient medium at 25W40°C to give a gelatinous carrier wherein the anaerobic bacterium capable of producing ethanol is fixed. The fixed bacterium is reacted with the nutrient medium comprising 100W400mg/ml fermentable sugar, e.g., glucose, theriac, etc. and the nutrient necessary to propagate the bacterium in the gel with stirring in contact, to give highly concentrated ethanol.
