Abstract

PURPOSE: An alcoholic beverage is frozen, kept at the melting point, and the liquefied fraction after a presecribed time interval is collected, thus producing various kinds of alcoholic beverages different in alcohol and essence concentration and permitting the diversification of products.
CONSTITUTION: Clear Japanese sake or fruit wine is frozen by cooling it to a temperature lower than the melting point, e.g., lower than -20°C. Then, the frozen alcoholic beverage is melted by standing it at a temperature higher than the melting point, e.g., at room temperature. In the thawing process, the liquefied fraction after a prescribed time is collected and the operation is repeated. Therefore, the beginning fractions are rich in alcohol and essence and later fractions become lower. In an example, clear Japanese sake is changed in the freezing and thawing tank 1 and gradually chilled to lower than -20°C to effect the gradual solidification. When thawed, the frozen sake are stood at room temperature and the liquefied fraction is taken out of the tank 1 into storage tank 3 after a certain interval. Further, the fraction is sent by pump through pipe 6 to the first tank 4 and the second tank 5 and stored therein.
