Abstract

PURPOSE: A specific treating method is applied, whereby flavoring ingredients in a soluble form with high preservability is obtained without adding preservative and drying operation.
CONSTITUTION: Fleshy substances, as the starting material, like by-products of domestic animals, poultry or fish, as internal organs of animals or chicken bones, are treated with an enzyme as protease or lipase at 42W48°C. Then, the product is heated to deactivate the enzyme, then the water content of the product is adjusted to 40W55 wt%. Further, 5W15 wt% of a polyhydric alcohol as sorbiton, mannitol, propylene glycol, butylene glycol is added thereto.
