Abstract
PURPOSE: Flesh of sea animals is adjusted in pH by adding edible salts, then defatted and dehydrated by bringing it into contact with a cooled hydrophilic organic solvent to produce a food material with a meatlike texture.
CONSTITUTION: Flesh of sea animals such as of fish, whale or mollusk, is, when neccessary, rinsed thoroughly with water, minced or chopped, adjusted in pH to 6.5W7.7 by adding an edible salt such as sodium glutamate or polymerized phosphate salt. The resultant pretreated flesh is brought into contact with a cooled hydrophilic organic solvent such as methanol or ethanol to effect defatting and dehydration.
