Abstract

PURPOSE: After water is penetrated into the inside tissues of soybean through bored holes, the resultant soybeans are irradiated with microwaves in a forcibly exhausting atmosphere to remove only the soybean odor components without adverse effects on the nutritions such as protein.
CONSTITUTION: Holes are bored on grains of soybean and water is penetrated into the inside tissues of soybean through the holes. Then, the resultant soybeans are irradiated with microwaves in a forcibly exhausting atmosphere to remove the odor of soybean. For example, grains of solybean P, which have been dehydrated in dehydrator 3, pass through conveyor 1" and 10W12 through-holes are bored on each grain of soybean with hole-borer 4. The needles 6 in the borer are tufted on both sides of belts 5 and the through holes are bored in such a way that the needles on both sides bite each other through the grain. The hole-bored soybeans are conveyed through conveyor 1''' to sprayer 8 where the soybeans are soaked in water until the water content becomes 15%. The resultant soybeans are sent to microwave irradiator 9 equipped with forcibly exhausting device 14 and irradiated with microwaves.
