Abstract

PURPOSE: To obtain an instant milk gel food having improved flavor, texture, and shape retention, readily in a simple process in a short time, by using xanthan gum and locust bean gum soluble in cold water in a suitable mixing ratio.
CONSTITUTION: (A) Polysaccharide xanthan gum produced through fermentation of glucose by bacteria of the genus Xanthomonas is mixed with (B) locust bean gum, which is heated with sugar or an inorganic salt and water at about 80°C, and soluble in cold water, at a mixing ratio of (A)W(B) of 4:6W6:4. Sugar, an organic acid, perfume, etc. are dissolved in a milk constituent (M) at room temperature or below, and about 0.5W3%, preferably about 0.8W1.8%, based on M of the mixture of (A) and (B) is added to M and stirred by hand to give an instant milk gel food, e.g. mousse or Bavarian cream.
