Abstract

PURPOSE: To prepare the title beverage which can be easily dissolved or dispersed in water, milk, etc. before serve, by mixing low-fat fermented milk powder with pectin or carrageenan and a tribasic alkali phosphate, and drying the mixture to a particular water content.
CONSTITUTION: Fermented milk powder containing ≤5.0% of fat and obtained by the lactic fermentation of defatted milk or defatted soya milk, is mixed with 1.0W 6.0% of pectin or carrageenan to stabilize the casein in the milk. To improve the dispersiblity of the product, the mixture is further mixed with 1.0W8.0% of a tribasic alkali phosphate (e.g. tribasic potassium phosphate). The mixture is sweetened with sugar, etc., and if necessary, added with powdery milk, fruit juice, acidifier (e.g. citric acid), colorant, spices, etc. The mixture is optionally granulated, and dried to a water content of ≤3.0% to obtain the objective beverage. The content of the fermented milk powder in the lactic acid beverage is pref. 6W20%.
