Abstract

1485112 Gel-forming composition MERCK & CO INC 10 May 1976 [13 May 1975]. 19135/76 Heading A2B A gel forming composition, particularly suitable for use in food blends of milk or cream and acid juices (e.g. fruit juices) comprises a mixture of 20-50% xantham gum, 10- 45% locust bean gum and 30-50% carboxy methyl cellulose. The food blend may be gelled by the addition of 0.6-1.6% of the gum composition and the final food mixture may be heated to 150-170‹F for 30-60 minutes, preferably having less than 2% fat and a pH of less than 4.5.
