CONSTITUTION: Microorganisms, e.g. Bacillus circulans (FERM-P No.4765), which belong to the genus Bacillus, and have the ability to produce enzymes capable of readily hydrolyzing and solubilizing insoluble α-glucan, are inoculated in a nutrient medium, and cultured under aerobic conditions to form enzymes capable of hydrolyzing glucan, which are collected.
