Abstract

PURPOSE: To obtain ground frozen fish meat having a good taste and a high whiteness, by adding a liquid edible oil in a finely divided state to the meat.
CONSTITUTION: 0.1W3wt%, preferably 0.2W1wt%, of an edible oil, which is a liquid at room temperature, in a finely divided dispersion of particle size ≤30μ is added to ground frozen fish meat. Cotton seed, rice bran, soybean, olive, and peanut oils may be used as the oil. Preferably, an aqueous dispersion, obtained by finely dispersing the oil in an aqueous solution of a food additive surfactant and/or paste in a homomixer or homogenizer with vigorous stirring, is added, and homogeneously dispersed in the meat.
