Abstract

PURPOSE: To prepare white miso, by using (A) a sweet drink made from fermented rice, barley, and corn, and (B) crushed soybean.
CONSTITUTION: Nonglutinous and glutinous rice, barley, and corn are mixed and steamed or boiled to give koji, which is mixed with rice, barley, and corn, and maintained at 55W60°C for 4W6 hr to give a sweet drink. Soft soybean steamed or boiled is crushed and mixed with the drink thus obtained and seasonings, e.g. common salt, alum, and sodium glutamate, and then ripened at about 28°C for 10W30 days.
