Abstract
PURPOSE: To manufacture the title candy, easily, using a single pressure-vessel, by placing powder of hard candy in a pressure-vessel, introducing compressed N2, CO2, etc. into the vessel, and heating and fusing the powder without stirring.
CONSTITUTION: Powder of hard candy which may contain other edible materials, is placed into a prssure vessel, and compressed N2 or CO2 gas is introduced into the vessel. The candy powder is heated and fused together under pressure to obtain the candy containing high-pressure gas. The powder is finer than 10 mesh. The edible material is pref. a bubble-containing snack such as crushed pieces of popped rice, and its amount is ≤10wt% of the powder. The pressure and temperature of the vessel is about 5W70kg/cm2 and 60W140°C, respectively.
