Abstract

PURPOSE: A bacerium producing α-1, 6-glucosidase, which belongs to Bacillus, is cultured in a medium containing rice bran or its treated product, producing title enzyme useful for producing maltose, in high yield with industrial advantage.
CONSTITUTION: A bacterium producing α-1, 6-glucosidase, which belongs to Bacillus, e.g., Bacillus cereus mycoides FERM-P No.2391 is cultured in an enriched medium that contains usually 0.1W1% of rice bran and is adjusted in pH to 6W8. The rice bran may be added as it is; however, its effective constituents that is extracted from the rice bran dispersed in water at a pH of less that 5 also may be added. The addition of rice bran remarkably increases the production of α-1, 6- glucosidase compared with no addition. Further addition of ammonium phosphate, along with the rice bran or its treated product, increases more remarkably the production of the enzyme.
