【産業上の利用分野】本発明はオープンコーヒーカート
リッジの抽出のための方法、コーヒーカートリッジ及び
前記方法を実施するための抽出装置に関する。
【０００２】特に、本発明は実質的に円錐台形のカート
リッジ内に収容された炒られそして挽かれたコーヒーの
圧力下の高温の水の注入による抽出に関する。
【０００３】
【従来の技術及び発明が解決しようとする課題】特に圧
力下で抽出されるエスプレッソ形式のコーヒーの分野に
おいてコーヒーカートリッジを使用する幾つかの理由が
ある：即ち、衛生、コーヒーの最適保管、使用の容易性
、得られるコーヒーの品質のより良い制御及び抽出条件
の再現可能性が挙げられる。

【課題を解決するための手段】本発明は、従って、円形

プンカートリッジの抽出のための方法であって、水と空
気との混合物が密封面によって包囲されそして前記カー
トリッジの上面を刺通する注水器によって圧力下で注入
され、抽出間の不浸透性が前記注水器を包囲する密封面
に対する前記カートリッジの円形ビードの圧縮によって
確立され、水と空気との混合物がカートリッジの上面か
ら数ｍｍ下で上昇方向にカートリッジ内に注入されるよ

ッジは、外部空気に対し不浸透性を有せず、従ってもし
長期間に亙る貯蔵を必要とする場合は個別の袋内に密封
され、または、開口部を剥離可能の薄膜で覆われなくて
はならないカートリッジであると理解される。
【００１３】抽出液体が上向きに注射されるこの抽出方
法によって、コーヒーの層は最初の滴がカートリッジか
ら流れる前に徹底的に湿潤化され得、その結果、抽出が
圧力下で実際に行われそして、他方において、不適切な
抽出を生じ得る抽出液体の優先循環通路の形成が回避さ
れ得る。

【実施例】図１に示されるように、コーヒーのカートリ
ッジ１は横壁３とベース４とを有するカップ２から構成
される。
【００１９】図示される実施例において、横壁３は円錐
台形状であり、ベース４の直径はカップ２の開口の直径
より小さい。用語“円錐台形状”によれば、図１に示さ
れるごとき厳密な意味での円錐台形状が意味されるのみ
ならず、切頭楕円体形状、切頭球状または円筒形すらも
意味されると理解される。

水器７の円周を中心としてゴムから成る平坦な円形密封

Claims (7)

    【特許請求の範囲】
  1. 【請求項１】　　円形ビードを設けられた上面とフィル
    タを設けられた下面とを有する炒られそして挽かれたコ
    ーヒーを収容するオープンカートリッジの抽出のための
    方法において、水と空気との混合物が密封面によって包
    囲されそして前記オープンカートリッジの上面を刺通す
    る注水器によって圧力下で注入され、抽出間の不浸透性
    が注水器を包囲する密封面に対する前記オープンカート
    リッジの円形ビードの圧縮によって確立され、前記水と
    空気との混合物が前記オープンカートリッジの上面から
    数ｍｍ下で上昇方向に前記オープンカートリッジ内に注
    入されるように構成されることを特徴とするコーヒーを
    収容するオープンカートリッジの抽出のための方法。
  2. 【請求項２】　　請求項１に記載される方法において、
    フィルタが抽出過程間その伸びを制限する手段と接触し
    ていることを特徴とするコーヒーを収容するオープンカ
    ートリッジの抽出のための方法。
  3. 【請求項３】　　請求項１及び２の何れか一つの項に記
    載される方法を実施するためのコーヒーを収容するオー
    プンカートリッジ（１）において、実質的に円錐台形の
    横壁（３）と上面（６）と下面（４）とを備えたカップ
    （２）を有し、蓋（６）が溶接される円形ビードを備え
    たフランジ（５）を前記上面（６）が有し、そして前記
    オープンカートリッジ（１）内に収容されたコーヒーを
    外部の空気から離隔するフィルタを前記下面（４）が有
    することを特徴とするコーヒーを収容するオープンカー
    トリッジ。
  4. 【請求項４】　　請求項１または２に記載される方法を
    実施するため請求項３に記載されるコーヒーのオープン
    カートリッジを使用する抽出装置において、カートリッ
    ジホルダ（１１）のための締付斜面（９）を備えた締付
    リング（８）と、圧力下の水と空気との混合物を注入す
    るための注入器（７）であって前記締付リング（８）と
    同軸でありそして密封面（１０）によって包囲されたも
    のと、前記締付リング（８）の締付斜面（９）と協働す
    るように設計された２個の互いに正反対に位置する保持
    突起（１２１、１１３）を備えたカートリッジホルダ（
    １１）とを有し、前記注入器（７）がその端において上
    昇方向に圧力下の空気と水との混合物を注射するための
    手段（７１）であってオープンカートリッジ（１）の蓋
    （６）に穴をあけるように設計されたものを有すること
    を特徴とするコーヒーのオープンカートリッジを使用す
    る抽出装置。
  5. 【請求項５】　　請求項４に記載される抽出装置におい
    て、注入器（７）が水平線に対し０°〜２５°の角度（
    α）を成す複数の水吐出し穴（７１）を有することを特
    徴とするコーヒーのオープンカートリッジを使用する抽
    出装置。
  6. 【請求項６】　　請求項４に記載される抽出装置におい
    て、カートリッジホルダ（１１）が、保持突起（１１３
