Abstract

PURPOSE:To make it possible to readily obtain the subject product at a low cost, by pulverizing wheat bran, classifying the pulverized bran and blending the resultant high-dietary fiber fraction with other ingredients so as to provide a dietary fiber content within a specific range. CONSTITUTION:Wheat bran is pulverized and classified to initially remove, e.g., a fraction with a high albumen content, and a fraction consisting essentially of bound powder of pericarp-seed coat/aleurone layers is then classified and removed. The rest is then classified into a high-protein fraction and high-dietary fiber fraction and a fraction with a high fiber content having 150-350mu average particle diameter, 0.10-0.33g/cc bulk density and >=65wt.% dietary fiber content in the above-mentioned fractions is used and mixed with, e.g., vitamins and minerals, to afford the subject product.

Recently, dietary fiber has been used to prevent obesity, reduce obesity, improve carbohydrate metabolism, improve lipid metabolism, improve the physiological functions of the gastrointestinal tract such as promoting bowel movements, prevent gallstones, prevent colon cancer, and reduce the toxicity of harmful substances. It has been shown that it is effective, and its importance has been reaffirmed. However, the intake of dietary fiber has tended to decrease in recent years due to the westernization of dietary habits, and the need for dietary fiber intake has been emphasized. In order to compensate for the lack of dietary fiber intake, it is possible to consume bran such as wheat bran and rice bran, which contain relatively large amounts of dietary fiber and are inexpensive, either as they are or by adding them to other foods. (Special Publication No. 62-16621).

By the way, when eating bran such as wheat bran as it is or by adding it to other foods, it is necessary to ingest a large amount of bran in order for it to function effectively as dietary fiber. However, as is clear from the fact that wheat bran and other bran have traditionally been used as animal feed rather than human food, it is difficult to consume large amounts of them due to their poor taste. It was difficult.

The present inventors have continued various studies on more effective dietary fibers, as well as on the treatment and effective use of wheat bran containing a large amount of dietary fiber. - There is a method to efficiently obtain high fiber content classification and low fiber content classification (high protein classification) by classification, and this method was previously filed as Japanese Patent Application No. 31916/1983.

The present inventors have discovered that dietary fiber that can achieve the above objectives such as preventing obesity with a smaller amount than conventional wheat bran, can be more easily ingested than conventional wheat bran, and does not impair the taste and flavor of foods, etc. In addition, research has continued into the discovery and development of the above-mentioned high-fiber content classification and low-fiber content classification obtained by crushing and classifying wheat bran. As a result, we unexpectedly found that a high fiber content category with a fiber content of 65% by weight or more, obtained by crushing and classifying wheat bran, was able to prevent obesity, reduce weight, and reduce weight in a small amount compared to conventional wheat bran. The present invention was completed after discovering that it is more effective in improving carbohydrate metabolism, improving lipid metabolism, improving physiological functions of the gastrointestinal tract such as promoting bowel movement, preventing gallstones, preventing colon cancer, and reducing the toxicity of harmful substances. I almost did.

As the dietary fiber product of the high fiber content category in the present invention, any product obtained by crushing and classifying wheat bran and having a dietary fiber content of 65% by weight or more can be used. Its dietary fiber content of 65% by weight or more is about 1.3 times or more, and usually about 1.5 times more than the dietary fiber content contained in unprocessed wheat bran (usually about 40 to 50%). It's getting expensive. The upper limit of the dietary fiber content in the high fiber content category used in the present invention is not particularly limited, but is usually about 75% by weight. The average particle diameter, bulk density, etc. of the high fiber content category used in the present invention are not particularly limited. However, typically around 15

Among the classifications prepared by the following crushing and classification process, C
This category corresponds to the dietary fiber products (high fiber content category) of the present invention. Such category C is usually compared to categories 1 and 3, which are classified as unprocessed wheat bran and low fiber content category, and category 0, which is classified as pericarp/alyuron layer bonded powder, according to the table below. It contains each component in the proportions shown in 1, and its crude protein content is usually about 0.5 to 0.8 when the crude protein content of unprocessed wheat bran is 1. , and its dietary fiber content is extremely high at about 1.3 to 1.9 when the dietary fiber content of unprocessed wheat bran is 1.

In Table 3, Examples 3.5 and 7 correspond to Examples of the present invention, and Examples 2.4.6 and 8 correspond to Comparative Examples. From the results in Table 3, C
In Examples 3.5 and 7, in which the diets containing B, M, and mixed C categories containing vitamins and minerals were provided, feed M
Compared to Example 2 in which only F was provided, the rate of increase in body weight was significantly lower, and it is clear that it is effective in preventing obesity.

Examples 9 to 11 (Examples and Comparative Examples) Fifteen genetically obese rats with a weight range of 170 to 220 g were divided into three groups of five animals each (average weight of each group was 200 g/animal), and each group was 100% by weight of the same feed MF as used in Example 2 above, 100% by weight of the same B, M and Mixed C categories as used in Example 7 and Example 8.
The same B, M, and mixed unprocessed wheat bran used in 100
A diet consisting of % by weight was provided in the amounts shown in Table 4 below for 35 days, and weight gain at that time was examined. The results are shown in Table 4 below.

From the results in Table 4, it can be seen that in Example 10, in which Category C, which is a dietary fiber product of the present invention, was provided with B, M, and Mixed C categories, in which hitamine and minerals were mixed, in Example 9, in which only feed MF was provided, and B, M , the weight of the genetically obese rats decreased significantly compared to Example 11 in which mixed unprocessed wheat bran was provided,
It can be seen that the dietary fiber product of the present invention has a great effect on weight loss in obese individuals.

The dietary fiber content obtained by crushing and classifying wheat bran is 6.
The dietary fiber product of the present invention containing 5% by weight or more is more effective in preventing obesity, reducing weight of obese people, improving carbohydrate metabolism, and improving carbohydrate metabolism than unprocessed wheat bran conventionally used as dietary fiber.
Improving physiological functions of the gastrointestinal tract, such as improving lipid metabolism and promoting bowel movements,
Prevention of gallstones, colon cancer, reduction of toxicity of harmful substances, etc.
In particular, it has a remarkable effect on obesity prevention and weight loss in obese individuals. For this reason, the dietary fiber products of the present invention can achieve the desired effect with a smaller amount than conventional wheat bran, are easier to ingest, and when added to other foods, only a small amount is required. It does not impair the original flavor or texture of the food. Furthermore, since the dietary fiber products of the present invention are derived from wheat bran, they are inexpensive and easily available.
