装置:紫外検出器付き高速液体クロマトグラフ(日立製作所Chromaster)
カラム: Develosil RPAQUEOUS AR-5、4.6mm×250mm
ガードカラム:RP-ARガードカラム(野村化学)
移動相(A液): 100mMリン酸緩衝液(pH2.5)
移動相(B液): 90%アセトニトリル
流速:1.0ml/min
検出波長:254nm
カラム温度:40℃
試料注入量:10μl
分析時間:38分/サンプル
グラジエントの条件を示すのは、表1である。
表2で示すのは、酵素処理及び濃縮処理の実施前のトマトペーストにおけるBrix,pH,核酸分析(AMP、IMP)である。
Claims (10)
- 濃縮汁の製造方法であって、それを構成するのは、少なくとも、以下の工程である:
濃縮:ここで連続的に濃縮されるのは、野菜汁又は果汁であり、及び、
酵素処理:ここで酵素処理されるのは、野菜汁又は果汁であり、この処理と同時に或いは並行して前記濃縮が実施され、
前記濃縮での野菜汁又は果汁の温度は、50℃以上、かつ、75℃以下である。 - 請求項1の製造方法であって、それを構成するのは、更に、以下の工程である:
添加:ここで連続的に或いは断続的に添加されるのは、酵素であり、その添加先は、野菜汁又は果汁であり、その時期は、前記濃縮の実施中又は前記濃縮の実施前である。 - 請求項1又は2の製造方法であって、
前記酵素処理で使用する酵素の至適温度は、前記濃縮での野菜汁又は果汁の温度の範囲内である。 - 請求項1乃至3の何れかの製造方法であって、
前記酵素処理で使用する酵素の至適pHは、前記濃縮での野菜汁又は果汁のpHの範囲内である。 - 請求項4の製造方法であって、
前記濃縮での野菜汁又は果汁のpHは、3.0以上、かつ、5.0以下である。 - 請求項1乃至5の何れかの製造方法であって、
前記濃縮及び前記酵素処理の実施時間は、30分以上、かつ、3時間以下である。 - 濃縮汁の製造方法であって、それを構成するのは、少なくとも、以下の工程である:
濃縮:ここで連続的に濃縮されるのは、野菜汁又は果汁であり、及び、
添加:ここで連続的に或いは断続的に添加されるのは、酵素であり、その添加先は、野菜汁又は果汁であり、その時期は、前記濃縮の実施中であり、
前記濃縮での野菜汁又は果汁の温度は、50℃以上、かつ、75℃以下である。 - 濃縮汁の改質方法であって、それを構成するのは、少なくとも、以下の工程である:
濃縮:ここで連続的に濃縮されるのは、野菜汁又は果汁であり、
酵素処理:ここで酵素処理されるのは、野菜汁又は果汁であり、この処理と同時に或いは並行して前記濃縮が実施され、
前記濃縮での野菜汁又は果汁の温度は、50℃以上、かつ、75℃以下である。 - 請求項8の改質方法であって、それを構成するのは、更に、以下の工程である:
添加:ここで連続的に或いは断続的に添加されるのは、酵素であり、その添加先は、野菜汁又は果汁であり、その時期は、前記濃縮の実施中又は前記濃縮の実施前である。 - 濃縮汁の改質方法であって、それを構成するのは、少なくとも、以下の工程である:
