商V/tは、体積流量Qを与える。そして、フロー圧力pは、周囲圧力pUとの差圧Δp=p-pU=8バールとなる。
最適なエスプレッソの目標値は、次のように計算できる。
Q/Δp=1.25*10-12m4*s/kg (8)
K=1.32*10-15m2及び
KF=3.98*10-8m/s
KFの値は、透過性の乏しい多孔質体に関する文献値と非常によく一致している。

上述のように、第1の粒径Aを有する多糖含有粉末及び粒径Cを有する充填剤は、いずれの場合にも非水溶性であることが好ましい。
i)第1の平均粒径Aを有する多糖含有粉末と、ii)a)前記第1の平均粒径Aとは異なる第2の平均粒径Bを有する多糖含有粉末、及び/又はb)前記第1の平均粒径Aとは異なる、又は前記第1の平均粒径Aと同一の平均粒径Cを有する充填剤とを含む粉末混合物からペレットを提供するステップと、
ii)前記ペレットを架橋多糖を含むコーティング層で被覆するステップと
を含む。
本発明によるカプセルに関して上述した好ましい特徴は、本発明による方法についても好ましい。
i)第1の平均粒径Aを有する多糖含有粉末と、ii)a)前記第1の平均粒径Aとは異なる第2の平均粒径Bを有する多糖含有粉末、及び/又はb)前記第1の平均粒径Aとは異なる、又は前記第1の平均粒径Aと同一の平均粒径Cを有する充填剤とを含む粉末混合物からペレットを提供するステップと、
ii)ステップi)で得られた前記ペレットの少なくとも一部、好ましくは表面全体を、溶媒中の多糖の溶液と、又は分散剤中の多糖の分散体と接触させるステップと、
iii)任意選択的に、ステップii)の前記溶液又は前記分散体から前記ペレットを取り出すステップと、
iv)ステップii)又はiii)で得られた前記ペレットを、少なくとも1つの架橋剤と接触させるステップと、
v)必要な場合、ステップiv)の前記溶液から前記ペレットを取り出すステップと、
vi)ステップiv)又はv)で得られた前記ペレットを乾燥するステップと
を含む、カプセルの製造方法に関する。
本発明による方法は、特にペレットが球形である場合でも、エッジ又は継ぎ目を形成することなく、ペレットを均一にコーティングすることを可能にする。
溶媒又は分散剤は、水性の溶媒又は分散剤であることが好ましい。溶媒又は分散剤は、特に好ましくは水である。
Claims (14)
- カプセルに水を導入することによって、飲料粉末から作られる飲料を調製するためのカプセルであって、
前記カプセルが、粉末混合物から構成されるペレットを含み、
前記ペレットが、架橋多糖を含む少なくとも1つのコーティング層で被覆されているカプセルにおいて、
前記ペレットの前記粉末混合物が、
i)第1の平均粒径Aを有する多糖含有粉末と、
ii)前記第1の平均粒径Aとは異なる、又は前記第1の平均粒径Aと同一の平均粒径Cを有する非水溶性充填剤とを含み、
前記非水溶性充填剤は、二酸化ケイ素、ケイ酸カルシウム、炭酸カルシウム、二酸化チタン、ケイ酸アルミニウム、及び上記の材料の2つ以上の任意の混合物からなる群から選択される不活性材料を含み、
前記多糖含有粉末および/または前記非水溶性充填剤の23℃での水への溶解度が0.1g/ml未満であることを特徴とする、
カプセル。 - 前記カプセルの前記ペレットの前記粉末混合物が、前記第1の平均粒径Aを有する前記多糖含有粉末と、ii)前記第1の平均粒径Aと同一の前記第平均粒径Cを有する前記非水溶性充填剤とを含むことを特徴とする、請求項1に記載のカプセル。
- 前記第1の平均粒径Aが、0.01~0.5mm未満であることを特徴とする、請求項2に記載のカプセル。
- 前記カプセルの前記ペレットの前記粉末混合物が、前記第1の平均粒径Aを有する前記多糖含有粉末と、ii)前記第1の平均粒径Aとは異なる前記第平均粒径Cを有する前記非水溶性充填剤とを含み、前記平均粒径Cが、前記第1の平均粒径Aよりも小さいことを特徴とする、請求項1に記載のカプセル。
- 前記多糖含有粉末の前記平均粒径Aが、0.5~1.5mmであり、前記平均粒径Cが、0.01~0.5mm未満であることを特徴とする、請求項4に記載のカプセル。
- 前記カプセルの前記ペレットの前記粉末混合物が、前記第1の平均粒径Aを有する前記多糖含有粉末と、ii)前記第1の平均粒径Aとは異なる前記平均粒径Cを有する前記非水溶性充填剤とを含み、前記平均粒径Cが、前記第1の平均粒径Aよりも大きいことを特徴とする、請求項1に記載のカプセル。
- 前記多糖含有粉末の前記平均粒径Aが、0.01~0.5mm未満であり、前記平均粒径Cが、0.5~1.5mmであることを特徴とする、請求項6に記載のカプセル。
- 前記カプセルの前記ペレットの前記粉末混合物が、前記第1の平均粒径Aを有する前記多糖含有粉末と、ii)アスペクト比が2より大きい細長い形状を有する前記非水溶性充填剤とを含むことを特徴とする、請求項1に記載のカプセル。
- 前記第1の平均粒径Aが、0.01~0.5mm未満であり、繊維状充填剤の最長伸長が、0.5~3.0mmであることを特徴とする、請求項8に記載のカプセル。
- 前記ペレットの前記粉末混合物が、前記第1の平均粒径Aを有する前記多糖含有粉末を少なくとも50重量%と、ii)前記平均粒径Cを有する前記非水溶性充填剤を1~40重量%とを含むことを特徴とする、請求項1~9のいずれか1項に記載のカプセル。
- 前記多糖含有粉末が、コーヒー、茶、飲用チョコレート、ココア、粉乳、及び上記の材料の2つ以上の任意の混合物からなる群から選択される材料を含むことを特徴とする、請求項1~10のいずれか1項に記載のカプセル。
- 請求項1~11のいずれか1つに記載のカプセルに水を導入することによって、飲料粉末から作られる飲料を調製するためのカプセルの流動抵抗の調整方法であって、前記方法が、以下の
i)第1の平均粒径Aを有する多糖含有粉末と、ii)前記第1の平均粒径Aとは異なる、又は前記第1の平均粒径Aと同一の平均粒径Cを有する非水溶性充填剤とを含む粉末混合物からペレットを提供するステップであって、前記多糖含有粉末および/または前記非水溶性充填剤の23℃での水への溶解度が0.1g/ml未満であるステップと、
ii)前記ペレットを架橋多糖を含むコーティング層で被覆するステップと
を含む、方法。 - 請求項1~12のいずれかに記載のカプセルの製造方法であって、前記製造方法が、
i)第1の平均粒径Aを有する多糖含有粉末と、ii)前記第1の平均粒径Aとは異なる、又は前記第1の平均粒径Aと同一の平均粒径Cを有する非水溶性充填剤とを含む粉末混合物からペレットを提供するステップであって、前記多糖含有粉末および/または前記非水溶性充填剤の23℃での水への溶解度が0.1g/ml未満であるステップと、
ii)ステップi)で得られた前記ペレットの少なくとも一部を、溶媒中の多糖の溶液と、又は分散剤中の多糖の分散体と接触させるステップと、
iii)ステップii)の前記溶液又は前記分散体から前記ペレットを取り出すステップと、
iv)ステップii)又はiii)で得られた前記ペレットを、少なくとも1つの架橋剤と接触させるステップと、
v)ステップiv)の前記溶液から前記ペレットを取り出すステップと、
vi)ステップiv)又はv)で得られた前記ペレットを乾燥するステップと
を含む、製造方法。 - 前記ペレットが、ステップii)でアルギン酸アルカリ金属塩溶液に浸漬又は噴霧されることと、ステップiv)で前記ペレットが、アルカリ土類金属塩溶液に浸漬又は噴霧されることとを特徴とする、請求項13に記載の方法。
