本発明による液状イソマルト組成物の製造
本発明による液状イソマルト組成物及び液状比較イソマルト組成物を製造するために、以下に示す第1ステップで結晶性イソマルトベース混合物を製造した。これらは1,6-GPS及び1,1-GPMを43~57重量%の1,6-GPS対57~43重量%の1,1-GPMの等モル比で有し、以下ではイソマルトSTベース組成物(イソマルトSTベース)と呼ばれる (表1を参照)。その上、1,6-GPS及び1,1-GPMを70~80重量%の1,6-GPS対30~20重量%の1,1-GPMの比率で有し、イソマルトGSベース組成物(イソマルトGSベース)と呼ばれる、本発明による結晶性イソマルト組成物及び比較イソマルト組成物を製造した(表1を参照)。

グリコシル化イソマルト成分である1-O-(6'-O-α-D-グルコピラノシル)-α-D-グルコピラノシル-D-マンニトール(6'-g-1,1-GPM)、6-O-(6'-O-α-D-グルコピラノシル)-α-D-グルコピラノシル-D-ソルビトール(6'-g-1,6-GPS)、1,6-ジ-O-α-D-グルコピラノシル-D-ソルビトール(1-g-1,6-GPS)及び1,6-ジ-O-α-D-グルコピラノシル-D-マンニトール(6-g-1,1-GPM)を含み、液状イソマルト組成物中での6'-g-1,1-GPM:6'-g-1,6-GPS:1-g-1,6-GPS:6-g-1,1-GPMの重量比が1:(0.7~1.3):(0.3~1.1):(1~2)である(それぞれ、グリコシル化イソマルト成分の重量%及び乾燥物質(TS)に関する)ことを特徴とする、液状イソマルト組成物。
(実施形態2)
液状イソマルト組成物中での6'-g-1,1-GPM:6'-g-1,6-GPS:1-g-1,6-GPS:6-g-1,1-GPMの重量比が1:(0.8~1):(0.7~1):(1.2~1.8)である、実施形態1に記載の液状イソマルト組成物。
(実施形態3)
液状イソマルト組成物の総重量(TS)に対して0.01~0.2重量%の6'-g-1,1-GPMを含む、実施形態1又は2に記載の液状イソマルト組成物。
(実施形態4)
液状イソマルト組成物の総重量(TS)に対して0.01~0.2重量%の6'-g-1,6-GPSを含む、実施形態1又は2に記載の液状イソマルト組成物。
(実施形態5)
液状イソマルト組成物の総重量(TS)に対して0.01~0.2重量%の1-g-1,6-GPSを含む、実施形態1又は2に記載の液状イソマルト組成物。
(実施形態6)
液状イソマルト組成物の総重量(TS)に対して0.01~0.4重量%の6-g-1,1-GPMを含む、実施形態1又は2に記載の液状イソマルト組成物。
(実施形態7)
液状イソマルト組成物の総重量(TS)に対して少なくとも86重量%の1,6-GPS及び1,1-GPMを含む、実施形態1から6のいずれか一項に記載の液状イソマルト組成物。
(実施形態8)
液状イソマルト組成物の総重量(TS)に対して少なくとも40重量%の1,6-GPSを含む、実施形態1から7のいずれか一項に記載の液状イソマルト組成物。
(実施形態9)
液状イソマルト組成物の総重量(TS)に対して0.1~1.0重量%の1,1-GPS(1-O-α-グルコピラノシル-D-ソルビトール)を含む、実施形態1から8のいずれか一項に記載の液状イソマルト組成物。
(実施形態10)
液状イソマルト組成物の総重量(TS)に対して0.01~2.0重量%のデオキシ二糖アルコールを含む、実施形態1から9のいずれか一項に記載の液状イソマルト組成物。
(実施形態11)
液状イソマルト組成物の総重量(TS)に対して0.01~2.0重量%のグルコシルグリシトールを含む、実施形態1から10のいずれか一項に記載の液状イソマルト組成物。
(実施形態12)
液状イソマルト組成物の総重量(TS)に対して0.01~0.3重量%のマンニトールを含む、実施形態1から11のいずれか一項に記載の液状イソマルト組成物。
(実施形態13)
液状イソマルト組成物の総重量(TS)に対して0.01~0.4重量%のソルビトールを含む、実施形態1から12のいずれか一項に記載の液状イソマルト組成物。
(実施形態14)
液状イソマルト組成物の総重量に対して少なくとも5重量%の乾燥物質含有量を有する、実施形態1から13のいずれか一項に記載の液状イソマルト組成物。
(実施形態15)
液状イソマルト組成物の総重量に対して10~50重量%の乾燥物質含有量を有する、実施形態1から14のいずれか一項に記載の液状イソマルト組成物。
(実施形態16)
食品又は嗜好品中での、実施形態1から15のいずれか一項に記載の液状イソマルト組成物の使用。
(実施形態17)
チューインガムを被覆するための、実施形態16に記載の液状イソマルト組成物の使用。
Claims (16)
- グリコシル化イソマルト成分である1-O-(6'-O-α-D-グルコピラノシル)-α-D-グルコピラノシル-D-マンニトール(6'-g-1,1-GPM)、6-O-(6'-O-α-D-グルコピラノシル)-α-D-グルコピラノシル-D-ソルビトール(6'-g-1,6-GPS)、1,6-ジ-O-α-D-グルコピラノシル-D-ソルビトール(1-g-1,6-GPS)及び1,6-ジ-O-α-D-グルコピラノシル-D-マンニトール(6-g-1,1-GPM)を含み、液状イソマルト組成物中での6'-g-1,1-GPM:6'-g-1,6-GPS:1-g-1,6-GPS:6-g-1,1-GPMの重量比が1:(0.7~1.3):(0.3~1.1):(1~2)であり(それぞれ、グリコシル化イソマルト成分の重量%及び乾燥物質に関する)、且つ液状イソマルト組成物の総重量に対して少なくとも40重量%の1,6-GPS(6-O-α-D-グルコピラノシル-D-ソルビトール)を含むことを特徴とする、液状イソマルト組成物。
- 液状イソマルト組成物中での6'-g-1,1-GPM:6'-g-1,6-GPS:1-g-1,6-GPS:6-g-1,1-GPMの重量比が1:(0.8~1):(0.7~1):(1.2~1.8)である、請求項1に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~0.2重量%の6'-g-1,1-GPMを含む、請求項1又は2に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~0.2重量%の6'-g-1,6-GPSを含む、請求項1又は2に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~0.2重量%の1-g-1,6-GPSを含む、請求項1又は2に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~0.4重量%の6-g-1,1-GPMを含む、請求項1又は2に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して少なくとも86重量%の1,6-GPS及び1,1-GPMを含む、請求項1から6のいずれか一項に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.1~1.0重量%の1,1-GPS(1-O-α-グルコピラノシル-D-ソルビトール)を含む、請求項1から7のいずれか一項に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~2.0重量%のデオキシ二糖アルコールを含む、請求項1から8のいずれか一項に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~2.0重量%のグルコシルグリシトールを含む、請求項1から9のいずれか一項に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~0.3重量%のマンニトールを含む、請求項1から10のいずれか一項に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して0.01~0.4重量%のソルビトールを含む、請求項1から11のいずれか一項に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して少なくとも5重量%の乾燥物質含有量を有する、請求項1から12のいずれか一項に記載の液状イソマルト組成物。
- 液状イソマルト組成物の総重量に対して10~50重量%の乾燥物質含有量を有する、請求項1から13のいずれか一項に記載の液状イソマルト組成物。
- 食品又は嗜好品中での、請求項1から14のいずれか一項に記載の液状イソマルト組成物の使用。
- チューインガムを被覆するための、請求項15に記載の液状イソマルト組成物の使用。
