[0104]固体脂質ナノ粒子内での苦味ペプチドのカプセル化を更に調べるため、流動層被覆(Glatt、ベンチスケール)を用いて、ハイプロール(商標)3315の脂肪被覆を実施した。得られた固体脂質ナノ粒子を図4に示す。脂肪被覆を実施した後では、10%ハイプロール(商標)3315の再構成溶液にもはや苦味はなく、このことは、疎水性苦味ペプチドが固体脂質ナノ粒子内にカプセル化されていて、水中には放出されていなかったことを意味している。
[0106]オルガノゲル内での苦味ペプチドのカプセル化を更に調べるため、ハイプロール(商標)3315をヒマワリ油に分散させ、次いでモノグリセリドゲル化剤(ディモダン(Dimodan)(商標))を添加することによって、オルガノゲルを形成した。ゲル化の後、10%ハイプロール(商標)3315の再構成溶液の苦味が大幅に低減しており、このことは、疎水性苦味ペプチドがオルガノゲル内にカプセル化されていて、オルガノゲルから水中には放出されていなかったことを意味している。
Claims (7)
- 構造体内にカプセル化された疎水性苦味ペプチドを含む栄養組成物であって、
前記構造体が、油又は溶融脂肪と、リン脂質、レシチン、モノグリセリド、両親媒性ペプチド、ソルビタンモノステアレート、モノ、ジ及び/若しくはトリアシルグリセロール、脂肪酸、脂肪族アルコール、ワックス、フィトステロール、並びに/又はこれらの組合せからなるリストより選択されるゲル化剤と、を含むオルガノゲルである、栄養組成物。 - タンパク質加水分解物を含有する水相、及び、油又は溶融脂肪の少なくとも1種を含む油相を含む、エマルションを形成するステップと、
前記タンパク質加水分解物由来の疎水性苦味ペプチドが前記油相中の油滴内に移動した後に、ゲル化剤を前記エマルションに添加して、前記油滴をゲル化させることによりオルガノゲルを形成するステップと、を含み、
前記ゲル化剤の添加によって、前記疎水性苦味ペプチドが前記オルガノゲル内に取り込まれる、疎水性苦味ペプチドをカプセル化する方法。 - タンパク質を加水分解して前記タンパク質加水分解物を含む溶液を生じるステップを含み、前記加水分解の後、前記タンパク質加水分解物を含む前記溶液中に直接前記エマルションが形成されるようにして、前記疎水性苦味ペプチドが前記オルガノゲル内にインラインで取り込まれる、請求項2に記載の方法。
- 前記タンパク質加水分解物が、乳タンパク質加水分解物である、請求項2又は3に記載の方法。
- 前記加水分解により非苦味ペプチドが形成され、前記非苦味ペプチドの少なくとも一部が前記油相内には取り込まれない、請求項3に記載の方法。
- オルガノゲルである構造体と、該構造体内にカプセル化された疎水性苦味ペプチドとを含む、カプセル化疎水性苦味ペプチド。
- タンパク質加水分解物由来の疎水性苦味ペプチドを含む栄養組成物を、ヒトを除く動物に投与するステップを含み、前記疎水性苦味ペプチドが、オルガノゲルである構造体内にカプセル化されている、栄養を前記動物に供給する方法。
