Description
[1]レシチンと吸着剤とを接触させた後、吸着剤を除去することにより得られ、オリゴ糖含量が、吸着剤と接触前のレシチン中のオリゴ糖含量の50質量%以上であることを特徴とする加熱着色が抑制されたレシチンまたはレシチン製剤。
[2]さらに、ホスファチジルエタノールアミン含量が、吸着剤と接触前のレシチン中のホスファチジルエタノールアミン含量の80質量%以上であることを特徴とする前記[1]に記載のレシチンまたはレシチン製剤。
[3]吸着剤が、金属ケイ酸塩、金属酸化物、活性炭、ゼオライト、活性白土およびシリカゲルから選択される1種以上である前記[1]または[2]に記載のレシチンまたはレシチン製剤。
[4]吸着剤が、ケイ酸マグネシウム、ケイ酸カルシウム、ケイ酸アルミニウム、ケイ酸ナトリウム、ケイ酸カリウム、ケイ酸カルシウムアルミニウム、ケイ酸マグネシウムカルシウムおよびアルミノケイ酸ナトリウムから選択される1種以上の金属ケイ酸塩である前記[3]に記載のレシチンまたはレシチン製剤。
[5]以下の工程1〜3を含むことを特徴とする加熱着色が抑制されたレシチンまたはレシチン製剤の製造方法。
工程1:レシチンを溶剤に溶解または分散剤に分散しレシチン溶液またはレシチン分散液を調製する工程
工程2:得られたレシチン溶液またはレシチン分散液と吸着剤とを接触させる工程
工程3:レシチン溶液またはレシチン分散液から吸着剤を除去する工程
[6]工程1において、分散剤として油脂を用いてレシチン分散液を調製することを特徴とする前記[5]に記載の製造方法。
[7]工程1において、レシチン溶液またはレシチン分散液の酸価を調整することを含む前記[5]または[6]に記載の製造方法。
[8]吸着剤が、金属ケイ酸塩、金属酸化物、活性炭、ゼオライト、活性白土およびシリカゲルから選択される1種以上である前記[5]〜[7]のいずれかに記載の製造方法。
[9]吸着剤が、ケイ酸マグネシウム、ケイ酸カルシウム、ケイ酸アルミニウム、ケイ酸ナトリウム、ケイ酸カリウム、ケイ酸カルシウムアルミニウム、ケイ酸マグネシウムカルシウムおよびアルミノケイ酸ナトリウムから選択される1種以上の金属ケイ酸塩である前記[8]に記載の製造方法。
[10]前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を含有する食用油脂。
[11]前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を含有する食品添加物。
[12]前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を含有する化粧品。
[13]前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を含有する医薬品。
[14]前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を含有する飼料。
[15]前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を含有する工業製品。
[16]前記[10]に記載の食用油脂および/または前記[11]に記載の食品添加物を含有する飲食品。
[17]レシチンまたはレシチン製剤の加熱着色を抑制する方法であって、前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を用いることを特徴とする方法。
[18]レシチン含有食用油脂の加熱着色を抑制する方法であって、前記[1]〜[4]のいずれかに記載のレシチンまたはレシチン製剤を食用油脂に含有させることを特徴とする方法。
工程1:レシチンを溶剤に溶解または分散剤に分散しレシチン溶液またはレシチン分散液を調製する工程
工程2:得られたレシチン溶液またはレシチン分散液と吸着剤とを接触させる工程
工程3:レシチン溶液またはレシチン分散液から吸着剤を除去する工程
本発明のレシチンを製造できる限り工程1〜3以外の工程を含んでもよく、工程1〜3以外の工程の内容は特に限定されない。例えば、工程3の後に吸着剤を除去したレシチン溶液またはレシチン分散液を濃縮および/または乾燥する工程を設けてもよい。当該工程により、リン脂質の純度を適宜調整することができ、また、溶剤または分散剤を除去したレシチンを得ることができる。
レシチンの溶解に用いる溶剤は、レシチンを溶解できる溶剤であればいかなるものでもよい。例えば、カルボン酸のアルキルエステル、アルカン、脂肪族炭化水素、脂環式炭化水素、芳香族炭化水素、ハロゲン化炭化水素、アルコール等の有機溶剤が挙げられ、これらのいずれか1種または2種以上を混合して使用することができる。具体的には、例えば、酢酸メチル、酢酸エチル、プロピオン酸メチル、酪酸メチル、吉草酸メチル、カプロン酸メチル、ヘキサン、ヘプタン、オクタン、ノナン、デカン、流動パラフィン、石油エーテル、シクロヘキサン、メチルシクロヘキサン、シクロオクタン、ベンゼン、トルエン、キシレン、塩化メチレン、ジクロロメタン、クロロホルム、四塩化炭素、メタノール、エタノール、イソプロピルアルコール等が挙げられる。

その他の測定方法としては、例えば「基準油脂分析試験法4.3.3.2−1996リン脂質組成(高速液体クロマトグラフ法)」が挙げられる。
本発明の食用油脂は、例えば炒め油、離型油、炊飯油、フライ油、麺用油脂、製パン用油脂、製菓用油脂、香味油等に好適に使用することができる。本発明の食用油脂を使用して加熱調理すれば、加熱による着色が抑制された高品質の食品を提供することができる。
(1)実験材料
ペースト状大豆レシチン:SLP−ペースト(商品名、辻製油)
大豆白絞油(辻製油)
脂肪酸:TFA−130(商品名、築野食品工業)
ケイ酸マグネシウム:Dalsorb F50(The Dallas Group of America, Inc)
70mL容の瓶に、表1に記載の配合量でSLP−ペースト、大豆白絞油、TFA−130を計量し、60℃で30分間加温攪拌した。各サンプル(ペースト1〜6)について、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、酸価(mgKOH/g)および総リン脂質量(質量%)を測定した。
リン脂質組成(%)=リン脂質画分のリン量(mg/g)/総リン量(mg/g)
各サンプル(ペースト1〜6)の酸価および総リン脂質量の測定値を表2に示した。
70mL容の瓶に、ペースト1〜6(各20.00g)、Dalsorb F50(3.00g)を計量し、60℃で30分間加温攪拌した。加圧ろ過にてDalsorb F50を除去し、得られたろ液を真空乾燥(50℃、−0.09MPa、18時間)した。ケイ酸マグネシウム処理後のペースト1〜6は、それぞれペースト7〜12と表記する。ケイ酸マグネシウム処理後のペースト7〜12について、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、酸価および総リン脂質量を測定した。
各サンプル(ペースト7〜12)の酸価および総リン脂質量の測定値を表3に示した。
ケイ酸マグネシウム処理前後のリン脂質組成の変化をペースト3と9およびペースト6と12について比較した。各サンプルのリン脂質組成は基準油脂分析試験法に記載のリン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に従って測定した。具体的には、サンプルをクロロホルムに溶解した溶液を調製し、この溶液を100mm×100mmのシリカゲル薄層板の右下端に塗布し、展開溶媒A(クロロホルム:メタノール:アンモニア=130:60:8)で展開した。シリカゲル薄層板に付着している溶剤を乾燥した後、薄層板を右に90度回転し、展開溶媒B(クロロホルム:メタノール:酢酸:精製水=170:25:25:6)で展開した。シリカゲル薄層板に付着している溶剤を乾燥した後、硫酸発色により各リン脂質のスポットを確認した。求めたいリン脂質画分をシリカゲル薄層板から剥離した後、「基準油脂分析試験法4.3.4−1996リン(湿式分解法)」に従ってリン量を測定し、リン量からリン脂質組成を算出した。
ケイ酸マグネシウム処理前後のオリゴ糖含量の変化を全てのサンプル(ペースト1〜12)について比較した。レシチン中のオリゴ糖含量(質量%)は以下の方法で測定した。
各サンプル(ペースト1〜12、総リン脂質量として0.25g)にヘキサン(12.5mL)と60%エタノール水溶液(12.5mL)を加えて液−液分配し、60%エタノール水溶液画分を得た。次に、残存したヘキサン画分に再度60%エタノール水溶液(12.5mL)を加えて液−液分配し、60%エタノール水溶液画分を得た。この操作を合計で4回実施し、水溶性物質を含む60%エタノール水溶液画分を濃縮・真空乾燥した。得られた60%エタノール水溶液画分乾燥物は、水に再溶解してSep−Pak(ODS)に負荷した後、水10mLで溶出し、得られた水画分を濃縮・真空乾燥した。さらに、得られた水画分乾燥物は、水に再溶解してSep−Pak(NH2)に負荷した後、75%アセトニトリル水溶液10mLで溶出し、得られた75%アセトニトリル水溶液を濃縮・真空乾燥した後、HPLCによって定量分析を行った。なお、HPLC分析条件は以下の通りである。

30mL容の瓶に、表6に記載の配合量で総リン脂質量が1質量%となるようにペースト1〜12(1〜6はケイ酸マグネシウム処理前、7〜12はケイ酸マグネシウム処理後)および大豆白絞油を計量し、60℃で10分間加温攪拌した後、各サンプル6gを試験管に計量して200℃で15分間加熱した。
結果を図1に示した。ケイ酸マグネシウム処理前の酸価が高いサンプルの方が、着色抑制率が大きいことが示された。

大豆白絞油(辻製油)

70mL容の瓶に、表7に記載の配合量でSLP−PC35、大豆白絞油、TFA−130を計量し、60℃で30分間加温攪拌した。各サンプル(PC35−1〜6)について、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、実施例1と同じ方法で酸価(mgKOH/g)および総リン脂質量(質量%)を測定した。各サンプル(PC35−1〜6)の酸価および総リン脂質量の測定値を表8に示した。
70mL容の瓶に、PC35−1〜6(各20.00g)、Dalsorb F50(3.00g)を計量し、60℃で30分間加温攪拌した。加圧ろ過にてDalsorb F50を除去し、得られたろ液を真空乾燥(50℃、−0.09MPa、18時間)した。ケイ酸マグネシウム処理後のPC35−1〜6は、それぞれPC35−7〜12と表記する。ケイ酸マグネシウム処理後のPC35−7〜12について、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、実施例1と同じ方法で酸価および総リン脂質量を測定した。各サンプル(PC35−7〜12)の酸価および総リン脂質量の測定値を表9に示した。
30mL容の瓶に、表10に記載の配合量で総リン脂質量が1質量%となるようにPC35−1〜12(1〜6はケイ酸マグネシウム処理前、7〜12はケイ酸マグネシウム処理後)および大豆白絞油を計量し、60℃で10分間加温攪拌した後、各サンプル6gを試験管に計量して200℃で15分間加熱した。
結果を図2に示した。ケイ酸マグネシウム処理前の酸価が高いサンプルの方が、着色抑制率が大きいことが示された。

塊状分別レシチン:SLP−PC70(商品名、辻製油、PC(ホスファチジルコリン)を70%含有し、油脂溶解性とともに水溶性にも優れた分別レシチン)
大豆白絞油(辻製油)
脂肪酸:TFA−130(商品名、築野食品工業)
ケイ酸マグネシウム:Dalsorb F50(The Dallas Group of America, Inc)
70mL容の瓶に、表11に記載の配合量でSLP−PC70、大豆白絞油、TFA−130を計量し、60℃で30分間加温攪拌した。各サンプル(PC70−1〜6)について、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、実施例1と同じ方法で酸価(mgKOH/g)および総リン脂質量(質量%)を測定した。各PC70サンプル(PC70−1〜6)の酸価および総リン脂質量の測定値を表12に示した。
70mL容の瓶に、PC70−1〜6(各20.00g)、Dalsorb F50(3.00g)を計量し、60℃で30分間加温攪拌した。加圧ろ過にてDalsorb F50を除去し、得られたろ液を真空乾燥(50℃、−0.09MPa、18時間)した。ケイ酸マグネシウム処理後のPC70−1〜6は、それぞれPC70−7〜12と表記する。ケイ酸マグネシウム処理後のPC70−7〜12について、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、実施例1と同じ方法で酸価および総リン脂質量を測定した。各PC70サンプル(PC70−7〜12)の酸価および総リン脂質量の測定値を表13に示した。
30mL容の瓶に、表14に記載の配合量で総リン脂質量が1質量%となるようにPC70−1〜12(1〜6はケイ酸マグネシウム処理前、7〜12はケイ酸マグネシウム処理後)および大豆白絞油を計量し、60℃で10分間加温攪拌した後、各サンプル6gを試験管に計量して200℃で15分間加熱した。
結果を図3に示した。ケイ酸マグネシウム処理前の酸価が高いサンプルの方が、着色抑制率が大きいことが示された。

実施例1のペースト1および6と同様の方法でサンプルを調製した(ペースト13および14)。各サンプルについて、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、実施例1と同じ方法で酸価(mgKOH/g)および総リン脂質量(質量%)を測定した。
各サンプル(ペースト13および14)の酸価および総リン脂質量の測定値を表15に示した。
ケイ酸マグネシウムの代わりにケイ酸カルシウムを使用したこと以外は、実施例1と同様の方法にて吸着剤処理を実施した。ケイ酸カルシウム処理後のペースト13および14は、それぞれペースト15および16と表記する。ケイ酸カルシウム処理後のペースト15および16について、基準油脂分析試験法に記載の酸価(4.2.1−1996)および、リン脂質組成(薄層クロマトグラフ法、4.3.3.1−1996)に準拠し、実施例1と同じ方法で酸価および総リン脂質量を測定した。
各サンプル(ペースト15および16)の酸価および総リン脂質量の測定値を表16に示した。
30mL容の瓶に、表17に記載の配合量で総リン脂質量が1質量%となるようにペースト13〜16(13および14はケイ酸カルシウム処理前、15および16はケイ酸カルシウム処理後)並びに大豆白絞油を計量し、60℃で10分間加温攪拌した後、各サンプル6gを試験管に計量して200℃で15分間加熱した。
結果を図4に示した。ケイ酸カルシウム処理前の酸価が高いサンプルの方が、着色抑制率が大きいことが示された。
Claims (5)
- 以下の工程1〜3を含むこと、
工程1:レシチンを溶剤に溶解または分散剤に分散しレシチン溶液またはレシチン分散液を調製する工程
工程2:工程1により得られたレシチン溶液またはレシチン分散液と吸着剤とを接触させる工程
工程3:工程2を行った後にレシチン溶液またはレシチン分散液から吸着剤を除去する工程、
ここで、工程1において、レシチン溶液またはレシチン分散液に1種または2種以上の遊離脂肪酸を添加してレシチン溶液またはレシチン分散液の酸価を高くすること、
を特徴とする加熱着色が抑制されたレシチンまたはレシチン製剤の製造方法。 - 工程1において、分散剤として油脂を用いてレシチン分散液を調製することを特徴とする請求項1に記載の製造方法。
- 吸着剤が、金属ケイ酸塩、金属酸化物、活性炭、ゼオライト、活性白土およびシリカゲルから選択される1種以上である請求項1又は2に記載の製造方法。
- 吸着剤が、ケイ酸マグネシウム、ケイ酸カルシウム、ケイ酸アルミニウム、ケイ酸ナトリウム、ケイ酸カリウム、ケイ酸カルシウムアルミニウム、ケイ酸マグネシウムカルシウムおよびアルミノケイ酸ナトリウムから選択される1種以上の金属ケイ酸塩である請求項3に記載の製造方法。
- 遊離脂肪酸が、カプリル酸、ラウリン酸、ミリスチン酸、パルミチン酸、ステアリン酸、ベヘン酸、アラキジン酸、パルミトオレイン酸、オレイン酸、リノール酸、α-およびγ-リノレイン酸、エルシン酸、アラキドン酸、エイコサペンタエン酸、ドコサヘキサエン酸およびテトラコサテトラエン酸から選択される1種以上である、請求項1〜4のいずれか1項に記載の製造方法。
