尚、本発明において、「コクキレ感」とは、コクとキレの最適なバランスのことである。
ビールテイスト飲料のアルコール度数は、好ましくは1〜10容量%、より好ましくは4〜6容量%である。尚、本発明において、アルコール度数とは、エタノール濃度を示す。

一方、麦芽を使用せずにビールテイスト飲料を得る場合には、炭素源を含有する液糖、麦芽以外の窒素源含有材料(例えば、大豆、エンドウ豆及びトウモロコシ等のタンパク質原料の分解物)、ホップ、色素等を、温水と共に混合し、液糖溶液を調製する。当該液糖溶液を、煮沸し、ホップ粕等の沈殿物を除去して冷却する。これにより、発酵用の水溶液が得られる。

麦芽17kg、副原料としてコーンスターチ5kgを糖化し、76℃で酵素失活を行った。得られた液(麦汁)を濾過した。ろ過後、麦汁を煮沸釜に入れ、200Lになるように水を加えた後、ホップを適量添加した。ホップの添加後、70分間煮沸し、180Lの麦汁を得た。その後、湯を加え200Lになるように液量を再調整した後、ワールプール(旋回分離槽)で固液分離した。固液分離後、熱交換器によって麦汁を冷却した。冷却後、麦汁に酵母を添加し発酵させた。発酵後の液は濾過にて清澄化し、1.2倍希釈後に、容器に充填した。
上記の方法により、例1〜例3に係るビールテイスト飲料を得た。尚、例1〜3におけるアミノ酸の含有量は、アミノ態窒素A−Nとして3mg/100mLであった。また、例1〜例3では、外観最終発酵度をそれぞれ89%、102%、108%になるように調整した。また、例1〜例3の飲料における糖質の含有量は、例1は3g/100mLであり、例2は1.5g/100mLであり、例3は0.5g/100mLである。アルコール度数は4〜6容量%であった。
得られた例1〜3に係るビールテイスト飲料について、10名のパネリストにより、キレ及び水っぽさについて官能検査を行った。尚、官能評価にあたっては、例1の飲料を対照(4点)として、7段階で評価した。「キレ」については、点数が低いものほどキレがなく、点数が高いものほどキレがあることを示す。「水っぽさ」については、点数が低いものほど水っぽくなく、点数が高いものほど水っぽいことを示す。
結果を下記表1に示す。

By the above method, beer-taste beverages according to Examples 1 to 3 were obtained. The amino acid content in Examples 1 to 3 was 3 mg / 100 mL as amino nitrogen A-N. In Examples 1 to 3, the final final fermentation degree was adjusted to 89%, 102%, and 108%, respectively. 例2、4乃至例6の飲料について、10名のパネリストにより、キレ、水っぽさ、コク、後味の強さ、及びコクとキレのバランスのそれぞれについて、官能検査を行った。評価にあたっては、例2の飲料を対照(4点)とし、7段階で評価した。「キレ」については、点数が低いものほどキレがなく、点数が高いものほどキレがあることを示す。「水っぽさ」については、点数が低いものほど水っぽくなく、点数が高いものほど水っぽいことを示す。「コク」については、点数が低いものほどコクがなく、点数が高いものほどコクがあることを示す。「後味の強さ」については、点数が低いものほど後味が弱く、点数が高いものほど後味が強いことを示す。「コクとキレのバランス」については、点数が低いものほどコクとキレのバランスが悪く、点数が高いものほどコクとキレのバランスが良いことを示す。
結果を下記表2に示す。
