Description
Claims (23)
- 50から90%の、グリセロール、プロピレングリコール、1,3−プロパンジオール、ポリエチレングリコール、ポリグリセロール、及びポリグリセロールエステルから成る群のうち少なくとも1つを含む非水性の液体と、
30%未満の水及び揮発性の非水性の液体と、
10から70%のコーヒー固形分と、
を含むことを特徴とする液体のコーヒー飲料濃縮物であって、
前記コーヒー飲料濃縮物は、室温で気体ではなく流動可能な流体組成物である、
コーヒー飲料濃縮物。 - 前記非水性の液体は、前記濃縮物中の水及び揮発性の非水性の液体の量以上の量で不揮発性の非水性の液体を含むことを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。
- 50から90%の不揮発性の非水性の液体を含むことを特徴とする請求項1又は2に記載の液体のコーヒー飲料濃縮物。
- 前記不揮発性の非水性の液体が、グリセロール、プロピレングリコール、及び1,3−プロパンジオールから成る群のうち少なくとも1つを含むことを特徴とする請求項3に記載の液体のコーヒー飲料濃縮物。
- 20重量%未満の揮発性の非水性の液体を含んでいることを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。
- 水及び揮発性の非水性の液体の量が、不揮発性の非水性の液体の量以下であることを特徴とする請求項5に記載の液体のコーヒー飲料濃縮物。
- コーヒー固形分が、フリーズドライ加工されたコーヒー、スプレードライ加工されたコーヒー、スプレードライ加工された茶、粉砕された焙煎コーヒー、インスタントコーヒー粉末、粉砕されたコーヒー豆、及びそれらの組合せから成る群から選択されることを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。
- 前記コーヒー固形分が、粉砕されたコーヒー豆を含むことを特徴とする請求項7に記載
の液体のコーヒー飲料濃縮物。 - 前記非水性の液体が、コーヒー豆、コーヒーチェリー、使用済みのコーヒーかす、及びコーヒー油のうち少なくとも1つから調達される非水性の液体を含むことを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。
- 前記濃縮物中の水及び揮発性の非水性の液体の合計量が、前記濃縮物の合計固形分含有
量以下であることを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。 - 25から60%のコーヒー固形分を含むことを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。
- 20%未満の水及び揮発性の非水性の液体を含んでいることを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。
- 前記コーヒー固形分が、粉砕された焙煎コーヒーを含むことを特徴とする請求項1に記載の液体のコーヒー飲料濃縮物。
- 室温で気体ではなく流動可能な流体組成物である液体のコーヒー飲料濃縮物を調製する方法であって、
10から70%のコーヒー固形分を、50から90%の非水性の、グリセロール、プロピレングリコール、1,3−プロパンジオール、ポリエチレングリコール、ポリグリセロール、及びポリグリセロールエステルから成る群のうち少なくとも1つを含む液体中で混合して混合物を形成するステップと、
前記混合物を処理して前記コーヒー固形分の平均粒子サイズを50ミクロン未満に低下させて前記液体のコーヒー飲料濃縮物を得るステップと、
を含むことを特徴とする方法。 - 25から60%のコーヒー固形分を含むことを特徴とする請求項14に記載の方法。
- 35から55%のコーヒー固形分が含まれていることを特徴とする請求項14又は15に記載の方法。
- 前記濃縮物が、前記濃縮物の重量の30%未満の水及び揮発性の非水性の液体を含有することを特徴とする請求項14から16のいずれかに記載の方法。
- 前記非水性の液体が、前記濃縮物中の水及び揮発性の非水性の液体の量以上の量で不揮発性の非水性の液体を含むことを特徴とする請求項14から17のいずれかに記載の方法。
- 前記濃縮物が、50から90%の不揮発性の非水性の液体を含むことを特徴とする請求項14から18のいずれかに記載の方法。
- 前記不揮発性の非水性の液体が、グリセロール、プロピレングリコール、及び1,3−プロパンジオールから成る群のうち少なくとも1つを含むことを特徴とする請求項14から19のいずれかに記載の方法。
- 前記濃縮物が、20重量%未満の揮発性の非水性の液体及び水を含んでいることを特徴とする請求項14から20のいずれかに記載の方法。
- 水及び揮発性の非水性の液体の量が、不揮発性の非水性の液体の量以下であることを特
徴とする請求項14から21のいずれかに記載の方法。 - 前記コーヒー固形分が、豆、種子、葉、根、花、小枝、茎、樹皮、莢、蕾、皮、針葉、及びそれらの組合せから成る群から選択されることを特徴とする請求項14から22のいずれかに記載の方法。
