S15 均質工程
Claims (8)
- 原材料の調合処理を行う調合工程と、加熱処理を行う殺菌工程と、均質処理を行う均質工程とを備えてなる液状栄養食品の製造方法であって、
タンク内にローター及び1〜7mmのスリット幅で構成されたステータを有する調合タンクからなる、少なくとも減圧状態で、加温・冷却・攪拌の操作が可能な多機能タンクを前記調合工程の調合処理に使用し、
前記多機能タンクを用いた前記調合処理を10分間以上で行い、
前記調合工程後の平均脂肪球径が1μm以下に調整されている
ことを特徴とする液状栄養食品の製造方法。 - 前記多機能タンクを用いた前記調合処理を15分間以上で行う
ことを特徴とする請求項1に記載の液状栄養食品の製造方法。 - 前記液状栄養食品の粘度が15〜100cPに調整されていることを特徴とする請求項1又は2記載の液状栄養食品の製造方法。
- 前記液状栄養食品の組成が、タンパク質が30〜100mg/ml、油脂が20〜100mg/ml、糖質が50〜350mg/mlであることを特徴とする請求項1乃至3のいずれか一項記載の液状栄養食品の製造方法。
- 僅少な隙間で構成された均質ディスク又は多段バルブを有する均質機を前記均質工程の均質処理に使用することを特徴とする請求項1乃至4のいずれか一項に記載の液状栄養食品の製造方法。
- 前記均質機が、20〜80μmの僅少な隙間で構成された均質ディスク又は多段バルブを有する均質機であることを特徴とする請求項5記載の液状栄養食品の製造方法。
- 前記均質工程後の平均脂肪球径が0.5μm以下に調整されていることを特徴とする請求項1乃至6のいずれか一項記載の液状栄養食品の製造方法。
- 前記均質処理を50MPa以下の均質化圧力で行うことを特徴とする請求項1乃至7のいずれか一項記載の液状栄養食品の製造方法。
