Claims (2)
- 穀物のアルカリ浸漬による澱粉製造方法において、破砕していない白米粒をそのまま原料に用いて、浸漬液のpHが10.0〜12.5の範囲内に維持されるように、浸漬液に添加用アルカリ性薬品を添加しながら浸漬時間3〜8時間で浸漬する浸漬工程から得られた澱粉懸濁液を糖化する澱粉糖の製造方法。
- 浸漬液用アルカリ性薬品及び添加用アルカリ性薬品が水酸化ナトリウムである請求項1記載の製造方法。
