Description
本発明の好ましい態様は、以下を包含する。
〔1〕ステロールエステル含量が粉末の含量を基準に少なくとも30重量%である、ステロールとステロールエステルの過冷却メルト状のステロール含有粉末調製物。
〔2〕ステロールエステルは2〜24個の炭素原子の鎖長を有する脂肪酸エステルであることを特徴とする、上記〔1〕に記載のステロール含有粉末調製物。
〔3〕ステロールエステルは6〜10個の炭素原子の鎖長を有する脂肪酸エステルであることを特徴とする、上記〔1〕または〔2〕に記載のステロール含有粉末調製物。
〔4〕全ステロール含量はステロール含有粉末調製物を基準に少なくとも65重量%であることを特徴とする、上記〔1〕〜〔3〕のいずれかに記載のステロール含有粉末調製物。
〔5〕ステロールとステロールエステルの重量比は3:7〜7:3の範囲内であることを特徴とする、上記〔1〕〜〔4〕のいずれかに記載のステロール含有粉末調製物。
〔6〕ステロールとステロールエステルの重量比は1:4〜3:2の範囲内であることを特徴とする、上記〔1〕〜〔5〕のいずれかに記載のステロール含有粉末調製物。
〔7〕最大3mmの平均粒度を有することを特徴とする、上記〔1〕〜〔6〕のいずれかに記載のステロール含有粉末調製物。

中鎖脂肪酸によるステロールエステルの製造
8〜10個の炭素原子(69〜75%のC8、23〜27%のC10)を含有する脂肪酸726gを反応槽中へ導入し、窒素下で120℃に加熱した。次いで、トール油ステロール1120gと菜種ステロール480gを3回に分けてゆっくり添加し、温度を100℃以上に保持した。次いで、反応器の内容物を210℃まで3時間加熱し、反応蒸留液の上部相を連続的に反応混合物へ還流させた。その後、混合物を100mbarに排気し4時間撹拌した。次いで、過剰の脂肪酸を15mbarで留去させ、反応混合物を90℃に冷却して窒素でパージした。混合物を85℃/30mbar未満で30分間乾燥させた後、窒素でパージした。最後の精製工程は、190℃/3mbarにてストリッピング蒸気を導入(1分あたり0.2g)することによって行った。無臭、淡色で、感覚中性の高融点固体1911gと黄色の透明蒸留液16gが残渣として得られた。
ステロールとステロールエステルの粉体化過冷却メルトの製造
a)C8〜10脂肪酸によるステロールエステル(実施例1によるもの)83.3gを、トール油ステロール11.7gおよび菜種ステロール5.0gと一緒に140±3℃で溶融させた。透明なメルトが生成し、80℃の温度まで透明であった。メルトを金属板上に室温で注ぎ出し、固化の20時間後に、Krups beater mill中で粉砕した。使用した遊離ステロール中のエステル化ステロールと使用したステロールエステル中の遊離ステロールの残存含有量を考慮して、得られた過冷却メルト形態の粉砕粉末は、81.7:20.4の全ステロールと遊離ステロールの重量比を有していた。
こうして得られた粉末を乳汁および水に分散させ、同程度の粒度分布を有する粉末化ステロールと比較した。この目的で、試験すべき液体約250mLをガラスビーカー中へ注ぎ入れ、撹拌した(約100r.p.m.)。各粉末2.5gを撹拌液に添加し、分散挙動を評価した。

- ステロールエステルおよび/またはスタノールエステル含量が粉末の含量を基準に少なくとも30重量%である、ステロールおよび/またはスタノールとステロールエステルおよび/またはスタノールエステルの過冷却メルト状のステロールおよび/またはスタノール含有粉末調製物であって、ステロールエステルおよび/またはスタノールエステルが6〜10個の炭素原子の鎖長を有する脂肪酸エステルを含んでなり、ステロールおよび/またはスタノールとステロールエステルおよび/またはスタノールエステルの重量比が3:7〜7:3の範囲内であることを特徴とする、ステロールおよび/またはスタノール含有粉末調製物。
- 全ステロールおよび/または全スタノール含量はステロールおよび/またはスタノール含有粉末調製物を基準に少なくとも65重量%であることを特徴とする、請求項1に記載のステロールおよび/またはスタノール含有粉末調製物。
- 最大3mmの平均粒度を有することを特徴とする、請求項1または2に記載のステロールおよび/またはスタノール含有粉末調製物。
- 請求項1〜3のいずれかに記載のステロールおよび/またはスタノール含有粉末調製物0.1〜50重量%を含有する食品。

- ステロールおよび/またはスタノールならびにステロールエステルおよび/またはスタノールエステルを120〜190℃で一緒に溶融し、溶融混合物を冷却し、および固化した混合物を粉砕によって粉末にサイズを減じることを含む、ステロールおよび/またはスタノール含有粉末調製物の製造方法であって、ステロールエステルおよび/またはスタノールエステル含量が粉末の含量を基準に少なくとも30重量%であり、ステロールエステルおよび/またはスタノールエステルが6〜10個の炭素原子の鎖長を有する脂肪酸エステルを含んでなり、ステロールおよび/またはスタノールとステロールエステルおよび/またはスタノールエステルの重量比が3:7〜7:3の範囲内であることを特徴とする、方法。
