上面および下面が開口した筒状型(1)と、この筒状型(1)の上面開口部(10)に着脱可能に装着させるパンチング捨板蓋(2)及びパンチング上板蓋(4)と、前記筒状型(1)の下面開口部(11)に着脱可能に装着させるパンチング下板蓋(3)と、を備えた成形型を用い、
前記筒状型(1)が上下反転して下向きになった上面開口部(10)にパンチング捨板蓋(2)が装着されている状態を作る捨板蓋装着工程(A)と、
そのパンチング捨板蓋(2)を装着させた筒状型(1)の内部に上向きになった下面開口部(11)から原料豆腐(T)を供給させる原料供給工程(B)と、
前記筒状型(1)の内部に供給させた原料豆腐(T)の上面(T1)の均し工程(C)を経たのち、上向きになった前記下面開口部(11)にパンチング下板蓋(3)を装着させる下板蓋装着工程(D)と、
前記パンチング捨板蓋(2)を上向きにさせ、パンチング下板蓋(3)を下向きにさせるように筒状型(1)を上下反転させる反転工程(E)と、
上向きにさせたパンチング捨板蓋(2)を上面開口部(10)から取り外し、その上面開口部(10)にパンチング上板蓋(4)を装着させる板蓋取替え工程(F)と、
この板蓋取替え工程(F)ののちパンチング下板蓋(3)とパンチング上板蓋(4)との間で筒状型(1)内の原料豆腐(T)を加圧させるプレス工程(G)と、
このプレス工程(G)ののちパンチング上板蓋(4)を上面開口部(10)から取り外す上板蓋取り外し工程(H)と、
