Description
通常、鉄は食物の形態として摂取されたのち、消化管内でFe2+やFe3+のイオンとして遊出し、一部はフェリチンおよびFe3+として血漿中に存在するが大部分はヘモグロビンの形成にあずかることが知られている。
また、有機の鉄製剤は、無機の鉄製剤に見られるような副作用は低減しているものの、高用量を摂取しないと目的とする鉄補給効果が得られないことやコスト高につながることもあり、いずれの鉄製剤にも課題があるのが実情である。
しかしながら、このような鉄製剤は徐放性の付与に伴って溶解性が低下するため、所望の鉄補給効果を得るには高用量を摂取することになり、また食品に添加すると容易にイオン化して、無機の鉄製剤と同様の副作用を引き起こすことがあった。
(1)微細化した鉄原料と浄化水に麹菌と糖質を加えて一次醗酵させたのち、麹菌、酵母、クエン酸菌、乳酸菌、酢酸菌を単独でまたはこれらの2種以上の混合物と糖質を加えて二次醗酵させ、さらにこの醗酵鉄原料にクエン酸、乳酸、酢酸、酒石酸、リンゴ酸から選ばれるカルボキシル基を有する有機酸を単独でまたはこれらの2種以上の混合物を混合して35℃〜45℃の温度に保持して熟成し、さらにこれを濾過抽出することにより有機酸と鉄が解離している電解質の状態として構成するので吸収性が良く副作用も伴うことがない鉄補給組成物を容易に得ることができる。
(2)醗酵鉄原料に有機酸を加えて熟成する際、鉄の吸収促進物質として知られるビタミンC(L−アスコルビン酸)を加えるので、吸収性をさらに向上させることができる。
(3)得られた鉄補給組成物は有機酸鉄となっているので胃液(HCl)の影響を受けることなく吸収されるので副作用は殆ど起こらず、吸収性も良いことから、従来のサプリメント(ヘム鉄)よりも貧血などの状態を改善でき、また、食品加工の分野においても品質維持や風味の改善を図ることができ、さらには、家畜や愛玩動物の飼料添加材、鉄欠乏性疾患の予防または治療用などにも供することができる、
など種々の効果を奏するものである。
図1において、本発明に係る鉄補給組成物の製造方法においては、まず、従来公知の手段により微細化した原料鉄粉10を用意し、この原料鉄粉10の重量に対して8倍量〜15倍量の水、好ましくは、上水から塩素などの不純物を除去した精製水12を混合して10分程度煮沸したのち、35℃〜40℃まで冷却する。
次に煮沸処理した原料鉄粉10と精製水12の混合物14に対して10重量%〜30重量%の麹菌16と、この麹菌16と略同量の糖質18を加え加熱ヒータなどで35℃〜40℃で10日ほど保持することにより一次醗酵させる。
この場合、麹菌の添加量が10重量%未満であると充分な醗酵が行われず、また30重量%を超えると量が多すぎて経済性が低下することになる。
なお、一次醗酵鉄原料20に加える麹菌、酵母、クエン酸菌、乳酸菌、酢酸菌あるいはこれらの混合物22が10重量%未満であると醗酵が充分行われず、また20重量%を超えると量が多すぎて経済性が低下してしまう。
この場合、クエン酸、乳酸、酢酸、酒石酸、リンゴ酸などのカルボキシル基を有する有機酸あるいは混合有機酸26が10重量%未満であると二次醗酵物22の熟成に時間がかかり、また40重量%を超えると有機酸分が多くなりすぎて酸味が強くなってしまう。
この抽出によって得られた鉄補給液状組成物32は、金釘臭ともいわれる独特の鉄臭さや収斂味がほとんどなく、100m中に約2.5%(2454mg)の鉄Feを含有していた。
次に、上述の方法により得られた鉄補給組成物32と、非ヘム鉄に比べるとはるかに吸収性の良いヘム鉄を使用したサプリメント鉄剤A(A社製)の吸収性を比較した。

Claims (3)
- 微細化した鉄原料に所定量の浄化水を加えて蒸煮殺菌し、つぎにこれに麹菌と糖質を加えて一次醗酵させたのち、麹菌、酵母、クエン酸菌、乳酸菌、酢酸菌を単独でまたはこれらの2種以上の混合物と糖質を加えて二次醗酵させ、さらにこの醗酵鉄原料にクエン酸、乳酸、酢酸、酒石酸、リンゴ酸から選ばれるカルボキシル基を有する有機酸を単独でまたはこれらの2種以上の混合物を混合して35℃〜45℃の温度に保持して熟成し、さらにこれを濾過抽出することを特徴とする鉄補給組成物の製造方法。
- 醗酵鉄原料を熟成する際に、この醗酵鉄原料に対して1重量%〜8重量%のL−アスコルビン酸を加えることからなる請求項1に記載の鉄補給組成物の製造方法。
- 醗酵鉄原料の熟成は、遠赤外線照射およびエレクトロン供給雰囲気において流動させながら行うことからなる請求項1または2に記載の鉄補給組成物の製造方法。
