Description
[0088]カプチーノタイプ飲料が、従来のディスペンサー(Bravilor Bonomat−20)を用いて脱イオン水150g中に脱塩乳清タンパク質分離物粉末7gを溶解することによって調製された。飲料は、85℃を用いる通常の作動条件で分配された。
[0092]カプチーノ飲料が、付加される乳酸カルシウム五水和物とともに水を用いること以外は、実施例1で与えられた条件の下で調製された。最終飲料中のカルシウム濃度は150ppmであった。
[0096]カプチーノ飲料が、付加される乳酸カルシウム五水和物とともに脱塩乳清タンパク質分離物粉末を用いること以外は、実施例1で与えられた条件の下で調製された。最終飲料中のカルシウム濃度は150ppmであった。

Claims (6)
- 飲料用の質の向上した泡を生成するための方法であって、
少なくとも1つの発泡源を用意するステップと、
多価イオン源を用意するステップと、
前記多価イオン源から離れた液体源を用意するステップと、
前記発泡源、前記多価イオン源及び前記液体源を組み合わせ、エアレーションして、泡を生成するステップと、を含み、
前記発泡源が、乳タンパク質、非乳タンパク質、脱塩乳清タンパク質分離物製品、低鉱化乳清タンパク質分離物製品及びそれらの組合せからなる群より選択される粉末状タンパク質源であり、
前記多価イオン源が、塩化カルシウム、臭化カルシウム、乳酸カルシウム、硝酸カルシウム、酢酸カルシウム、アスコルビン酸カルシウム及びそれらの組合せからなる群より選択される、少なくとも1つの水可溶性多価イオン源であり、
前記液体源が、脱イオン水、蒸留水、軟水、硬水及びそれらの組合せからなる群より選択される飲料水源であり、
前記発泡源及び前記水可溶性多価イオン源が、前記液体源との組み合わせの前には一緒に乾燥混合物として貯蔵される方法。 - 前記非乳タンパク質が、カゼイン酸ナトリウムである、請求項1に記載の方法。
- エアレーションの間に、前記発泡源及び前記水可溶性多価イオン源を前記液体源の中に同時に分配する、請求項1に記載の方法。
- 前記エアレーションが、かき混ぜ、混合、泡立て、攪拌、化学的/生化学的反応による気体生成、気体放出超音波処理、及びそれらの組合せ、からなる群より選択される、請求項1に記載の方法。
- 前記エアレーションが、前記発泡源、前記水可溶性多価イオン源及び前記液体源を組み合わせると同時に行われる、請求項4に記載の方法。
- 飲料用の質の向上した泡を生成するためのシステムであって、
少なくとも1つの乾燥タンパク質源及び少なくとも1つの多価イオン源を乾燥配合物として貯蔵する手段と、
前記乾燥配合物及び再構成液体を同時にエアレーションし、質の向上した泡を有する液体飲料を生成させる手段と、を備え、
前記多価イオン源が、塩化カルシウム、臭化カルシウム、乳酸カルシウム、硝酸カルシウム、酢酸カルシウム、アスコルビン酸カルシウム及びそれらの組合せからなる群より選択される水可溶性乾燥多価イオン源であり、
前記乾燥タンパク質源が、乳タンパク質、非乳タンパク質、脱塩乳清タンパク質分離物製品、低鉱化乳清タンパク質分離物製品及びそれらの組合せからなる群より選択される粉末状タンパク質源であり、
前記再構成液体が、脱イオン水、蒸留水、軟水、硬水及びそれらの組合せからなる群より選択される飲料水源である、システム。
