乳酸菌研究集談会編「乳酸菌の科学と技術」株式会社学会出版センター、1996年2月28日、p.352〜353
以下に、先ず、本発明の容器について図面を用いて具体的に説明する。
次に、本発明の凍結物包装体について説明する。
次に、前述した本発明の凍結物包装体の製造方法について説明する。
図1に示すゲーベルトップ型であり、その上部近傍(図1参照)にフィルター材に覆われた通気口が設けられた本発明の実施例1の紙容器(内容量:2リットル)を準備した。
比較例1にかかる紙容器として、前記本発明の実施例1と同様の形状、大きさ、層構成を有する紙容器を準備した。ただし、この紙容器には、通気口は形成されていない。
比較例2にかかる紙容器として、前記本発明の実施例1と同様の形状、大きさ、層構成を有し、さらに実施例1にかかる紙容器と同様の通気口が形成されている紙容器を準備した。ただし、この紙容器に形成されている通気口は、フィルター材で覆われていない(つまり、容器に単に通気口が形成されているのみである)。
前記本発明の実施例1の容器(4個)、および比較例1の容器(4個)を準備し、それぞれ、上述した本発明の凍結物包装体の製造方法により、凍結物包装体を製造した。
前記本発明の実施例1の容器、および比較例1、2の容器を準備し、それぞれに、ガンマ線を10〜30kGy照射して容器内部を滅菌処理した。
前記本発明の実施例1の容器(4個)、および比較例1の容器(4個)を準備し、それぞれの容器に前記試験2と同様の凍結物を、それぞれ充填量を変えて(400ml(容器容積の20%)、1000ml(容器容積の50%)、1500ml(容器容積の75%)、2000ml(容器容積の100%))充填した後、容器上端部を密封し、凍結物包装体を形成した。
(比較例3)
容器本体の層構成を、容器の外側から、ポリエチレン/紙/ポリエチレンとした以外は全て上記実施例1の紙容器と同様の、本発明の比較例3を準備した。
本発明の実施例1の容器の本体に用いた積層体(アルミニウム箔層あり)と、比較例3の容器の本体に用いた積層体(アルミニウム薄層なし)とを準備し、それぞれの積層体の引裂き強度、および破裂強度を測定した。
本発明の実施例1の容器の本体に用いた積層体(アルミニウム箔層あり)と、比較例3の容器の本体に用いた積層体(アルミニウム薄層なし)とを準備し、それぞれの積層体の酸素透過度と水蒸気透過度を測定した。
本発明の実施例1の容器と、比較例3の容器とをそれぞれ準備し、それぞれの容器に、牛乳培地(10%脱脂粉乳溶液+1%酵母エキス)で形成したビフィズス菌凍結ペレットを容器内に充填し、その後容器未開封のままで、当該ビフィズス菌凍結ペレットを溶解させて37℃で発酵させた時の容器内の溶解液のpH変化を測定した。

Claims (6)
- 少なくとも紙及びアルミニウムの薄膜を含む積層体により形成された凍結物を充填するための容器であって、
その少なくとも一部には、微生物非透過性で且つJIS−P8117(ガーレ法)による通気度が5〜10000sec/100ccの範囲内の不織布により形成された通気性フィルター材により覆われた通気口が形成されていることを特徴とする容器。 - 少なくとも紙及びアルミニウムの薄層を含む積層体により形成された容器であって、その少なくとも一部に、微生物非透過性で且つJIS−P8117(ガ−レ法)による通気度が5〜10000sec/100ccの範囲内の不織布により形成された通気性フィルター材により覆われた通気孔を有する容器と、
この容器に充填された凍結菌体からなる凍結物包装体。 - 凍結菌体がビフィズス菌凍結ペレットである請求項2に記載の凍結物包装体。
- 液体培地で培養した菌体を培地と共に液体窒素中に滴下してペレット状の凍結菌体とした後、これを少なくとも紙及びアルミニウムの薄層を含む積層体により形成された容器であって、その少なくとも一部に、微生物非透過性で且つJIS−P8117(ガ−レ法)による通気度が5〜10000sec/100ccの範囲内の不織布により形成された通気性フィルター材により覆われた通気孔を有する容器に充填して、該充填容器を密封する工程を含む凍結物包装体の製造法。
- 液体培地で培養した菌体を培地と共に液体窒素中に滴下してペレット状の凍結菌体とした後、これを少なくとも紙及びアルミニウムの薄層を含む積層体により形成された容器であって、その少なくとも一部に、微生物非透過性で且つJIS−P8117(ガ−レ法)による通気度が5〜10000sec/100ccの範囲内の不織布により形成された通気性フィルター材により覆われた通気孔を有する容器に充填し、密封してなる凍結物包装体を、未開封状態で加温して凍結菌体を溶解した後、引き続き醗酵させることを特徴とする、菌体の凍結・醗酵方法。
- 液体培地が牛乳であり、凍結菌体がビフィズス菌凍結ペレットであり、且つ、醗酵温度が37℃である請求項5に記載の菌体の凍結・醗酵方法。
