本発明は、誘導加熱調理器に係り、さらに詳しくは、1台の調理器(炊飯器)で炊飯及び惣菜などの煮物を行うことのできる誘導加熱調理器に関するものである。

【従来の技術】
従来のこの種誘導加熱調理器に、電磁誘導加熱装置と炊飯器本体とを分離可能とし、炊飯器として使用する場合は、電磁誘導加熱装置の上に炊飯器本体を載置して加熱することにより炊飯し、他の調理の加熱装置として利用する場合は、電磁誘導加熱装置から炊飯器本体を取外して電気的接続を遮断し、電磁誘導加熱装置の上に別の調理を目的とする鍋等を載置して加熱し、調理を行うようにしたものがある(例えば、特許文献1参照)。

また、誘導加熱により加熱を行う加熱装置と、この加熱装置に選択的に載置し得る複数の調理容器本体とからなり、調理容器本体のうち1つを炊飯用として、この炊飯用調理容器本体に対応した炊飯モードに使用する第1の操作部を加熱装置の側面に設けるとともに、その他の調理容器本体に対応した調理モードに使用する第2の操作部を加熱装置の上面に設け、炊飯用調理容器本体を載置したときに第2の操作部が隠れるようにしたものがある(例えば、特許文献2参照)。

【発明が解決しようとする課題】
特許文献1に記載の炊飯器は、電磁誘導加熱装置に対応して設置されている鍋は炊飯用鍋のみであり、調理の種類としては炊飯が主であるため調理の範囲が狭く限られている。また、炊飯以外の他の食材の調理を行う場合は、その都度電磁誘導加熱装置から炊飯用鍋を取外すと共に電気的接続を遮断し、他の食材が入れられた汎用の鍋等を電磁誘導加熱装置上に載置しなければならないので、きわめて面倒である。

特許文献2に記載の加熱調理器は、加熱装置に選択的に載置しうる複数の調理器本体(鍋)を必要とし、炊飯又は他の食材の調理を行う場合は、その都度加熱装置から調理器本体を取外して他の調理器本体と交換しなければならないので、矢張り面倒である。

特許文献3のジャー炊飯器は、1つの鍋で炊飯と煮物調理が可能であるが、特に、煮物調理の際にうまみの素である煮汁を鍋内に還元する機構が設けられていないので、味の不満が生じたり、煮汁で汚れたりして清掃が面倒である。

本発明は、上記の課題を解決するためになされたもので、1台の調理器に、炊飯用と煮物用の制御パターンを有する制御部を設け、調理の際に内鍋内の調理物を自動的に検出して制御部の制御パターンを切換えるようにした便利で使い勝手のよい誘導加熱調理器を提供することを目的としたものである。

【課題を解決するための手段】
本発明に係る誘導加熱調理器は、誘導加熱コイルと、上部が開口し前記誘導加熱コイルにより発熱する内鍋と、該内鍋の開口部を開閉自在に覆う蓋体と、前記誘導加熱コイルを制御する制御部と、該制御部を外部から操作する操作部とを有する本体ケースを備え、前記内鍋を、炊飯用内鍋と煮物用内鍋とによって構成すると共に、前記蓋体に着脱可能に装着された内蓋を、炊飯用内蓋と煮物用内蓋とにより構成して、前記制御部を、炊飯用と煮物用の制御パターンを有し前記操作部により選択可能に構成し、前記蓋体に内外と連通する蒸気抜き孔及び調理物からのうまみを前記内鍋に還元するうまみ溜りを有するうまみ還元器を設けたものである。

【発明の実施の形態】
[実施の形態1]
図1は本発明の実施の形態1に係る誘導加熱調理器の内鍋収納部に炊飯用鍋を収納した状態を示す縦断面図、図2は図1の外観斜視図、図3は図1の内鍋収納部に蓋体を開放して煮物用鍋を収納した状態を示す斜視図である。
本発明に係る誘導加熱調理器は、上部が開口され内部に内鍋収納部5が形成された本体ケース1と、一端がヒンジ4を介して本体ケース1に取付けられ、本体ケース1の上部開口部を開閉する蓋体2と、上部が開口され内鍋収納部5に収納されて白米等を炊く炊飯用鍋40及び惣菜等を調理する煮物用鍋45(以下、白米等及び惣菜等を合わせて調理物ということがある)とからなっている。

内鍋収納部5の底部外壁面には、炊飯用鍋40及び煮物用鍋45(以下、両者を合わせて内鍋ということがある)を電磁誘導作用により発熱させて調理するための誘導加熱コイル6が設けられており、また、底部のほぼ中心部には、内鍋の温度を検出する温度センサ7が設けられている。

また、内鍋収納部5の下部には、後述の炊飯用制御パターンや煮物用制御パターン等を有し、電磁誘導コイル6の発熱量や通電時間等を制御する制御部8が設けられており、前面側(以下、図の左側を前面側、右側を後面側という)には、外部から制御部8を操作する操作部9が設けられている。この操作部9には、図4に示すように、炊飯スイッチ9a、予約スイッチ9b、保温スイッチ9c、煮物スイッチ9d、火力調整スイッチ9e、低温(保温)スイッチ9f及び表示部9g等が設けられている。10は本体ケース1の下部後面側に設けられたコードリールである。

蓋体2は上蓋2a、下蓋2b及び下蓋2bに着脱可能に装着された内蓋2cから構成されており、内蓋2cは炊飯用内蓋と煮物用内蓋とからなっている。また、上蓋2aの上面には後述するうまみ還元器20を着脱可能に装着するための凹部3aが設けられており、この凹部3aの前面側には上蓋2a、下蓋2b、内蓋2cを貫通して、うまみ還元器20の連結部23が挿入される貫通穴3bが設けられ、貫通穴3bとうまみ還元器20の連結部23との間には、シール部材3cが介装されている。11は蓋体2の前面側に設けられ、蓋体2を閉じたときにケース本体1にロックするためのラッチである。

うまみ還元器20は、図5に示すように、横長でほぼ皿状の下ケース21と、下ケース21の上部開口部を覆う上ケース22とから形成されており、下ケース21の底部の前面側には、蓋体2の貫通穴3bに挿入される有底円筒状の連結部23が突設されている。また、連結部23の前面側には、うまみ還元器20の内部と内鍋40とを連通し、うまみを含む蒸気をうまみ還元器20内に導く中空の案内筒24が立設されている。なお、下ケース21の底部は、連結部23に形成されたうまみ溜り25に向って下降する傾斜面に形成されている。

なお、図には、上ケース22をヒンジ34により下ケース21に開閉可能に取付けた場合を示したが、上ケース22を下ケース21に着脱可能に装着するようにしてもよく、このように構成することによりうまみ還元器20の清掃が容易である。

上記のようなうまみ還元器20において、例えば、白米と水が入れられて内鍋収納部5に収納された炊飯用鍋40が誘導加熱コイル6により加熱されて水が沸騰すると、うまみ(おねば)を含んだ蒸気(以下、単に蒸気という)が発生する。このとき、炊飯用鍋40の内圧が上昇しているので、うまみ還元器20の開閉弁27は押し上げられて戻し穴26を塞いでおり、このため、蒸気は案内筒24を通ってうまみ還元器20内に導かれる。案内筒24を出て第1の上障壁30に衝突した蒸気は、矢印で示すように、うまみ還元器20内を蒸気抜き孔29に向って拡散していき、この間、第2の上障壁31、下降壁28、第3の上障壁33に衝突しておねばと蒸気が確実に分離し、蒸気は蒸気抜き孔29から外部に放出され、おねばは下ケース21の底面に沿って流下し、うまみ溜り25に溜る。

加熱が低下して炊飯用鍋40の内圧が下ると、開閉弁27は自重及びおねばの重量によって下降し、戻し穴26を開口する。これにより、うまみ溜り25内に溜ったおねばは、戻し穴26から炊飯用鍋40内に落下する。おねばが炊飯用鍋40のご飯に戻ることにより、おねばに含まれるおいしさの成分がご飯に与えられて、つやや粘りのあるおいしいご飯を炊くことができる。また、煮物調理の場合も、煮汁がおねばと同じ役目を果す。
なお、上記の説明では、蓋体2に図5に示すうまみ還元器20を設けた場合を示したが、うまみ還元器20の構造はこれに限定するものではなく、他の構造のものであってもよい。

再び図1において、40は磁性材料からなり、白米などを炊飯する炊飯用鍋で、上部が開口されて鍋収納部5内に収容される本体部41と、本体部1の上端部外周に形成され、鍋収納部5の上端部5aに載置されるフランジ42とからなっている。

図6(b)は煮物用鍋45の他の例を示すもので、炊飯用鍋40とほぼ等しい形状の内鍋のフランジ47に、例えば耐熱性樹脂からなるほぼS字状の取っ手48を取付けたものである。この取っ手48はフランジ47に着脱自在に取付けてもよく、あるいは固定してもよい。煮物用鍋45をこのように構成することにより、他の調理器、例えば誘導加熱コイルを有し、プレート上に鍋を載置して加熱調理し、あるいはガスコンロにより直接煮込み調理を行うことができ、さらに調理を行ったのち、取っ手48を持って内鍋収納部5に収納して保温のみを行うこともできる。このとき、取っ手48を煮物用鍋45から取り外して蓋体2を閉じれば、長時間の保温も可能である。そのときは、操作部9に保温温度制御スイッチ(図示せず)を設けて所定温度に設定すればよい。

以上、煮物用鍋45の一例について説明したが、これに限定するものではなく、他の形状、構造のものを用いてもよい。
なお、煮物用鍋45の本体部46の外径を、炊飯用鍋40の本体部41の内径とほぼ等しいか又は若干小さく形成して、図7に示すように、煮物用鍋45の本体部46を炊飯用鍋40の本体部41内に収納できるようにすれば、コンパクトに梱包することができ、保管、輸送等に便利である。

また、炊飯用鍋40と煮物用鍋45とは、上述のようにフランジ42,47の形状を変えることにより区別することができるが、さらに、内鍋の本体部41,46の内壁の材料を変える(例えば、いずれか一方を銅メッキとする)、材質を変える(例えば、炊飯用鍋40を強磁性材料で形成し、煮物用鍋45を弱磁性材料で形成する)、本体部41,46の内壁の色を変える、内鍋の肉厚を変える(例えば、煮物用鍋45の肉厚を炊飯用鍋40の肉厚より厚くする)等により特定することができるので、間違って使用することがない。

次に、内鍋収納部5に収納された炊飯用鍋40又は煮物用鍋45を検知して判別する検知手段について説明する。図8は検知手段と制御系との関係の一例を示す説明図である。
電源50の一方の配線は本体ケース1内に設けた炊飯と煮物の切換手段である切換スイッチ51の共通接点52に接続され、他方の配線は誘導加熱コイル6に接続されており、切換スイッチ51には炊飯用端子53と煮物用端子54が設けられて、可動片55は常時は煮物用接点54に接続されている。そして、炊飯用接点53は操作部9の炊飯スイッチ9a、制御部8を経て誘導加熱コイル6に接続され、煮物用接点54は操作部9の煮物スイッチ9d、制御部8を経て誘導加熱コイル6に接続されている。

また、切換スイッチ51の炊飯用接点53側に設けたコイル56は電源50に接続されており、その回路中には常時は開放している検知スイッチ61を備えた検知手段60が設けられている。
そして、誘導加熱調理器の内鍋収納部5に炊飯用鍋40を収容すると、検知手段60の可動部62が検知スイッチ61の接片を押圧して回路を閉成し、コイル56に通電して切換スイッチ51の可動片55を吸引し、炊飯用接点53に接続して炊飯制御系を形成する。炊飯用鍋40を取出すと検知スイッチ61の回路が開放され、可動片55が煮物用接点54に接続されて煮物用制御系を形成するようになっている。また、内鍋収納部5に煮物用鍋45を収納すると、検知手段60の可動片62は移動せず、可動片62は煮物用接点54に接続された状態を維持し、煮物用制御系が形成される。

図9、図10は検知手段60の一例を示す説明図で、図9は鍋収納部5に炊飯用鍋40を収納した状態を示す。
鍋収納部5の上端部5aの前面側の一段低い位置には平坦部5bが設けられており、その下面には検知手段60を構成する検知スイッチ61が取付けられ、これに設けた可動部62が平坦部5bに設けた孔5cから上面に突出している。63aは電源50の一方の配線と検知スイッチ61の一方の端子に、63bは検知スイッチ61の他方の端子と切換スイッチ51のコイル56にそれぞれ接続された配線である。

いま、鍋収納部5内に炊飯用鍋40を収納して電源50を投入すると、炊飯用鍋40のフランジ42が検出スイッチ61の可動部62を圧下して検知スイッチ61を閉成し、切換スイッチ51のコイル56に通電してその磁気作用により可動片55を吸引し、炊飯用接点53に接続する。
炊飯用鍋40を内鍋収納部5から取出すと、可動部62が上昇して検知スイッチ61が開放されるので、切換スイッチ51の可動片55は再び煮物用接点54に接続される。

図10は鍋収納部5に煮物用鍋45を収納した状態を示すものである。鍋収納部5内に煮物用鍋45を収納すると、煮物用鍋45のフランジ47は上方に向って階段状に形成されているので、検知スイッチ61の可動部62より上方に位置し、これを圧下することはない。このため検知スイッチ61は引続き開放状態に維持され、切換スイッチ51の可動片55は煮物用接点24に接続されて煮物用制御系が形成されている。

本例においては、鍋収納部5の前面側に設け平坦部5bの下面に検出手段60を構成するリードスイッチ64を設けると共に、炊飯用鍋40のフランジ42の下面にリードスイッチ64と対向して永久磁石67を設けたもので、リードスイッチ64の一方の端子66aは電源50に接続され、他方の端子66bは切換スイッチ51のコイル56に接続されている。なお、リードスイッチ64に代えて近接スイッチを設けてもよい。

いま、図11に示すように、内鍋収納部5に炊飯用鍋40を収納すると永久磁石67の磁気作用によりリードスイッチ64の可動接片65bが吸引され、固定接片65aに接続されて回路を閉成し、切換スイッチ51のコイル56に通電してその可動片55を炊飯用接点53に接続し、炊飯用制御系を形成する。炊飯用鍋40を取出すとリードスイッチ64の可動接片65bが固定接片65aから離れて回路を開放し、切換スイッチ51の可動片55は再び煮物用接点54に接続される。

次に、図12に示すように、鍋収納部5に煮物用鍋45を収納すると、煮物用鍋45のフランジ47には永久磁石が設けられていないので、リードスイッチ64は作動せず開放状態を継続する。このため、切換スイッチ51の可動片55は引続き煮物用接点55に接続されている。
このように、本実施の形態においては、鍋収納部5に炊飯用鍋40又は煮物用鍋45を収納することにより、検知手段60の作用によって制御部8は炊飯用制御パターン又は煮物用制御パターンに自動的に切換えられる。なお、検知手段60によって検知した結果を例えば操作部9に表示させるようにしてもよく、これにより外部から確認することができる。

次に、上記のように構成した誘導加熱調理器により、炊飯及び惣菜等の煮物を行う場合の作用について説明する。
前述のように、制御部8には炊飯用制御パターンと煮物用制御パターンが設けられており、炊飯用制御パターンは、図13に示すように、誘導加熱コイル6に通電して炊飯用鍋40を発熱させて加熱し、炊飯用鍋40の温度が100℃近傍に達したとき(これは、底部に設けた温度センサ7によって検出される)は、連続的又は間欠的にその温度を維持し、時間Tを経過したときはその温度を下降させてほぼ70℃程度で保温する従来の炊飯制御とほぼ同様の制御パターンが用いられる。

一方、煮物用制御パターンは、図14に示すように、誘導加熱コイル6に通電して煮物用鍋45を発熱させて煮物を加熱する。そして、煮物用鍋45の温度が100℃近傍(例えば、95℃)に達したときは、連続的又は断続的にこの温度(93℃〜95℃)を維持し、時間t(この時間はt<Tであり、通常5分〜10分程度)経過したときは煮込み工程が終了して、以後例えば80℃〜85℃の低温加熱工程に移行する制御パターンが用いられる。

調理物である白米を炊飯する場合は、白米と水が入れられた炊飯用鍋40を鍋収納部5内に収納し、蓋体2を閉じて電源50を投入する。これにより、検知手段60が炊飯用鍋40が収納されたことを検知し、前述のように切換スイッチ51の可動片55が炊飯用接点53に接続される。ついで、操作部9の炊飯スイッチ9aをONして誘導加熱コイル6に通電すれば、誘導加熱コイル6は制御部8に設けた炊飯用制御パターンにしたがって制御され、炊飯を行う。

このとき、うまみ還元器のうまみ溜り25には前述のようにうまみであるおねばが溜り、炊飯工程から保温工程に移行したときは、開閉弁27が開いてうまみ溜り25内のおねばをご飯に戻し、つやや粘りのあるおいしいご飯を炊くことができる。この場合、おかゆや炊き込みご飯などを炊く場合は、操作部9に設けたこれらに対応するボタンを操作することにより、炊飯制御パターンの一部が変更される。

次に、調理物である惣菜等の煮物を行う場合は、食材、水、調味料等が入れられた煮物用鍋45を鍋収納部5内に収納し、蓋体2を閉じて電源50を投入する。このとき、前述のように切換スイッチ51の可動片55は煮物用接点54に接続されている。
ついで、操作部9の煮物スイッチ9dをONして誘導加熱コイル6に通電すれば、誘導加熱コイル6は制御部8に設けた煮物用制御パターンによって制御され、煮物用鍋45内の調理物を加熱し調理する。なお、調理物の種類によっては、操作部9に設けた調理物の種類に対応したスイッチ(図示せず)を操作することにより、煮物用制御パターンの一部が変更される。例えば、煮込時間や低温加熱の温度等を調理物に応じて自在に変化させる。

煮物の調理にあたり、加熱によってうまみ(煮汁)を含んだ蒸気が発生し、この蒸気は前述のようにうまみ還元器20内に導かれ、煮汁と蒸気が分離して蒸気は蒸気抜き孔29から外部に放出され、煮汁はうまみ溜り25に溜る。そして、煮込み工程から低加熱工程に移行すると煮汁のおいしい成分が煮物内に戻り、味のよいおいしい煮物を調理することができる。

本実施の形態によれば、煮物を行う際は煮物専用の煮物用鍋45を使用し、また、内鍋収納部5の開口部を覆う内鍋2cは、炊飯用内蓋と煮物用内蓋とを別々に設けた(両者を色変り等により区別できるようにすることが望ましい)ので、炊飯用鍋40や蓋体2cに煮物の臭いがつくことがなく、おいしいご飯を炊くことができる。なお、内蓋2cを1個設け、使用の都度取外して清掃するようにしてもよい。また、蓋体2をヒンジ4により本体ケース1に開閉自在に取付けた場合を示したが、ヒンジ4を省略し、蓋体2を本体ケース1に着脱自在に設けても良い。このように構成することにより蓋体2の清掃がより容易になる。
