【発明の属する技術分野】
本発明は顧客の要求に応じて料理や飲み物を調整してこれを引き渡すオーダリングシステムに係り、特にファーストフード店等の店舗で料理や飲み物の注文を受けてから顧客に引き渡すまでの処理を行うようにしたオーダリングシステムに関する。

【従来の技術】
ハンバーガショップに代表される外食産業としてのファーストフード店は顧客が注文した料理や飲み物が比較的短い時間で提供され、また価格も手ごろなので、多くの者に利用されている。このようなファーストフード店では、価格との関係で短時間に多くの注文が想定される。したがって、これらを間違いなく迅速かつ円滑に処理することが要求される。同様に喫茶店や昼食時のレストラン、カレーショップ等のある種の店舗でも、客からの料理や飲み物についての多くの注文を迅速かつ円滑に処理することが要求される。このような店舗を本明細書では一括してファーストフード店等と称することにする。

ファーストフード店等のオーダリングシステムには幾つかのタイプが存在する。第1のタイプはハンバーガショップに代表されるオーダリングシステムである。この第1のタイプのオーダリングシステムではPOS(Point Of Sales:販売時点情報管理システム)端末を使用して顧客の注文に対して会計処理を行い、これとは別に顧客の注文を調理担当者に伝えて調理が終了したらこれを顧客に提供するようになっている。第2のタイプはファミリレストランに代表されるオーダリングシステムである。この第2のタイプのオーダリングシステムでは、顧客の注文を受け付ける顧客担当者がハンディターミナルと呼ばれる通信端末を携行しており、顧客のテーブルまで出向いて注文を聞き、ハンディターミナルに打ち込んでその内容を調理担当者に伝えるようにしている。調理が終了したら顧客担当者がこれを顧客のテーブルまで運ぶようになっている。

第1のタイプを更に具体的に説明する。まず、受付担当者が対面する顧客から注文を口頭で聞き取り、注文情報を取得する。ここで注文情報とはメニューに示された特定の料理やその数量等である。受付担当者はその注文情報を復唱しながらヘッドセットからその注文情報を入力する。そして、この注文情報を基にして代金を計算し、顧客からその代金を受け取って会計処理を終了させる。

一方、このようにして代金の受け取りが終了したら受付担当者は注文情報をメモ書きしてこれをキッチンの調理担当者の所に持っていって、その内容を読み上げるか、キッチンから離れた会計処理を行ったレジスタ等の場所から口頭で調理担当者に注文情報を直接伝達する。メモ書きを調理担当者に手渡す場合もある。調理担当者はこのようにして受け付けた注文情報に基づいて料理を行い、料理ができあがると、料理提供担当者がこれを注文した顧客に引き渡すようになっている。以上で料理に関する取引が完全に終了する。

以上が第1のタイプのオーダリングシステムである。このようなオーダリングシステムでは口頭で注文情報が調理担当者に伝達される。一般にファーストフード店等では店内に顧客が多数入っていることが多く、混雑しており音楽や音声等の雑音も多い。また、時間帯によっては時間当たりの注文の数が非常に多くなり、あわただしい。したがって、口頭で注文情報が調理担当者に伝達された場合には聞き間違いや聞き落としが発生しやすい。また、メモ書きをした内容を読み取って料理を作るような場合には、メモ書き自体に転記ミスがあったり、メモ書きの内容を読み間違える場合がある。この結果として料理の出し間違いや出し忘れが発生する頻度が高い。

そこで、このような騒音の多い環境で注文情報を調理等の担当者に確実かつ迅速に伝達するための提案が行われている。このうちの一つが顧客の注文に対応した給仕人の音声を音声認識してオーダデータとする第1の提案である(たとえば特許文献1)。この第1の提案では、給仕人の音声を図示しない音声認識装置で認識してオーダデータを作成する。このオーダデータは無線によってオーダ管理システム側に送信され、オーダデータリストが作成される。これによってオーダ入力装置に習熟していない給仕人であっても顧客からのオーダを受け付けることができる。

図9は従来の第2のタイプのオーダリングシステムの概要を説明するためのものである。この第2のタイプのオーダリングシステム10は、顧客用のフロア部11と、料理の配膳をする場所としてのデシャップ部12と、調理を行うキッチン部13とで構成されている。なお、「デシャップ」は「Dish up」がなまったものと言われており、英語ではない。

フロア部11にはテーブル21が配置されており、顧客グループ22が飲食のために座るようになっている。注文を受け付けたり料理を提供する顧客担当者23はフロア部11を担当し、注文を処理するための通信端末としてのハンディターミナル24を携帯している。キッチン部13はフロア部11と距離的に離れており、ハンディターミナル24から送られてきた注文情報をプリントアウトするキッチンプリンタ25が備えられている。調理担当者26はプリントアウトされた注文情報を基にして調理を行うようになっている。調理が終了すると、顧客担当者(料理を専門に顧客グループ22まで運ぶ者を含んでいる)23がこれを注文した顧客グループ22に提供する。

この第2のタイプのオーダリングシステムでは、ハンディターミナル24が操作に習熟を要する装置であるため、新たに雇用した顧客担当者23に対して機器に習熟させるための長期間の訓練が必要とされた。また、ハンディターミナル24に習熟した顧客担当者23であっても操作には意識を十分集中させる必要がある。このためハンディターミナル24の操作中は顧客への接客サービスが不十分となるといった問題があった。特に顧客担当者23がナイフ、フォーク、スプーン等のカトラリを出しながら注文を受け付けることは、両手がふさがっているので、困難であった。

そこで、各顧客に本人確認のためのID(Identification)カードを所持させておき、顧客に電子メニューから希望する料理を選択させ、これによって会計処理を行うようにすると共に、キッチンの調理担当者にもそのデータを送るようにした第2の提案も行われている(たとえば特許文献2)。

【発明が解決しようとする課題】
ところで、第1のタイプのオーダリングシステムに対する第1の提案では、顧客の注文情報をオーダデータリストに調整するか、あるいは注文情報をオーダデータというデータに置き換えてプリントアウト可能にしている。したがって、調理担当者に対する注文情報の伝達はプリントアウトした用紙あるいはオーダデータリストを使用して従来と同様に音声で読み上げるか、プリントアウトした用紙あるいはオーダデータリストを調理担当者に直接手渡すことになる。

ところが、この場合には2つの問題が発生する。第1の問題は音声認識の信頼性が低い点である。音声情報の認識は話者の特徴を十分把握していないと十分な認識率を得ることができない。したがって、給仕人の入れ替わりが激しいファーストフード店等の場合には、音声認識装置側が個々の給仕人の特性を把握できないことが想定される。給仕人の特性を把握していない状態で音声認識を行うと、注文情報を間違って認識し、先に説明した聞き間違いと全く同様の現象が多発する可能性がある。

加えて、ファーストフード店のように比較的廉価な料理を多くの人に提供するオーダリングシステムでは、顧客と対面する受付担当者は騒音の中で注文を受け付けることになり、音声認識装置側にとっては各種の雑音の中から音声を認識することになって、正確な認識が困難となる。また、受付担当者自身も、子供、老人等の各種の顧客と各種の状況の中で対応しながら注文情報を音声入力するので、しゃべり方や抑揚等も本人の認識用に登録した標準的な音声とは大きく異なる場合が多くなる。このような結果として受付担当者の音声に対する認識結果はきわめて信頼性の低いものになる可能性が高い。

第1の提案の第2の問題は、プリントアウトした用紙あるいはオーダデータリストを調理担当者に直接手渡すようにした場合に処理の遅延が生じる点である。プリントアウトする時間あるいはリストの作成が完了するまでの時間、料理の発注が停止するからである。プリントに使用した文字は、メモ書きされた文字よりも通常の場合小さい。したがって音声認識後のデータの信頼性が低いだけでなく、メモ書きされた文字を読み取る際に間違って読み取られる危険もある。

また、第2のタイプのオーダリングシステムに対する第2の提案では、大前提として全顧客がIDカードを所持する必要がある。したがって、ファミリレストランのように不特定の顧客を対象とすることができない。しかも顧客自身が電子メニューを直接操作する必要があるので、老人のように操作に抵抗を感じる者の利用率が低下するという問題がある。また、子供のように注文自体を理解せずにメニューを操作する者もいる。後者の場合には、メニューの操作結果が会計処理の対象になったり調理の内容としてそのまま調理担当者に指示される。したがって、顧客が希望していない無駄な料理が作られたり、必要としない料理に対して顧客が料金を支払うことになるといった問題が生じる。更に図9に示したキッチン部13ではキッチンプリンタ25から個々にプリントアウトされる注文伝票を基に調理を行う。したがって、これらプリントアウトされた注文伝票を時系列で並べておいても、特に注文が多いような場合には順番が入れ違いになったり注文伝票を紛失するといった事故が発生する。これにより先に頼んだ料理がかなり後から出てきたり、再度注文するまで出てこないという場合が存在した。

そこで本発明の目的は、顧客の注文を口頭で受け応えし、その内容が注文に対する処理の担当者に伝達され処理が実行されるようにしたオーダリングシステムを提供することにある。

【課題を解決するための手段】
請求項1記載の発明では、(イ)顧客の1会計処理に係わる複数の注文内容をそれぞれ個別に音声入力する注文内容音声入力手段と、(ロ)この注文内容音声入力手段の周囲の音を入力する雑音入力手段と、(ハ)この雑音入力手段の入力内容を用いて注文内容音声入力手段の入力した音声情報から雑音成分を抑制した注文情報を抽出する注文情報抽出手段と、(ニ)この注文情報抽出手段で抽出した注文情報を音声認識する音声認識手段と、(ホ)この音声認識手段の認識した注文情報を未処理注文情報として少なくとも注文内容を処理する側の近傍で視覚的に表示する未処理注文情報表示手段と、(へ)この未処理注文情報表示手段に表示された顧客の1会計処理に係わる複数の注文内容のうちの個々の注文内容が処理されるたびにこれらの処理が行われたことを表示形態の変更によって表示し、1会計処理に係わるすべての注文内容の処理が行われたときその表示を削除するように表示を行う表示内容更新手段とをオーダリングシステムに具備させる。

すなわち請求項1記載の発明では、顧客の1会計処理に係わる複数の注文内容をそれぞれ個別に音声で入力し、雑音入力手段で入力した音を用いて周囲の雑音成分を除去あるいは軽減してその後に音声認識を行うことで顧客の注文内容に対する入力音声の認識率を向上させている。そして、この注文内容を未処理注文情報として注文内容を処理する側の近傍で視覚的に表示することで注文内容の処理を行わせると共に表示内容更新手段で未処理注文情報表示手段に表示された顧客の1会計処理に係わる複数の注文内容のうちの個々の注文内容が処理されるたびにこれらの処理が行われたことを表示形態の変更によって表示し、1会計処理に係わるすべての注文内容の処理が行われたときその表示を削除するように表示を行うようにしている。これにより、周囲の雑音に影響されることを最小限に抑えながら、注文の内容が注文に対する処理の担当者に伝達され処理が良好に実行されることになる。また、顧客の1会計処理に係わる複数の注文内容があるときには、その会計処理に係わるすべての注文内容が処理されたときには未処理の表示を行う必要がなくなるのでその表示自体を削除するが、一部の注文内容がまだ残っているような場合には表示形態の変更によってそれが分るように表示することで、顧客の1会計処理に係わる部分的な処理のし忘れを防止するようにしている。

すなわち請求項2記載の発明では、顧客の1会計処理に係わる複数の注文内容をそれぞれ個別に音声で入力し、雑音入力手段で入力した音を用いて周囲の雑音成分を除去あるいは軽減してその後に音声認識を行うことで顧客の注文内容に対する入力音声の認識率を向上させている。しかも、確認情報出力手段は音声認識手段の認識した注文情報を音声に変換して確認のために出力することにしており、確認情報出力手段の出力にエラーがなかったとき音声認識手段の認識した注文情報を未処理注文情報として少なくとも注文内容を処理する側の近傍で視覚的に表示するので、注文内容が注文内容を処理する側に確実に伝達されることになる。また、表示内容更新手段で未処理注文情報表示手段に表示された顧客の1会計処理に係わる複数の注文内容のうちの個々の注文内容が処理されるたびにこれらの処理が行われたことを表示形態の変更によって表示し、1会計処理に係わるすべての注文内容の処理が行われたときその表示を削除するように表示を行う。これにより、周囲の雑音に影響されることを最小限に抑えながら、注文の内容が注文に対する処理の担当者に正確に伝達され処理が良好に実行されることになる。また、顧客の1会計処理に係わる複数の注文内容があるときには、その会計処理に係わるすべての注文内容が処理されたときには未処理の表示を行う必要がなくなるのでその表示自体を削除するが、一部の注文内容がまだ残っているような場合には表示形態の変更によってそれが分るように表示することで、顧客の1会計処理に係わる部分的な処理のし忘れを防止するようにしている。

図1は本発明の第1の実施例におけるオーダリングシステムの構成を表わしたものである。このオーダリングシステム100は、ファーストフード店舗に導入したもので、カウンタ部101とキッチン部102を備えた構成となっている。カウンタ部101には、POSレジスタ111と、タッチパネルの付いたタッチパネルディスプレイ112と周囲の音を拾う雑音マイク113、音声の入出力を行うヘッドセット114および無線移動局115が備えられている。

このうちヘッドセット114は顧客116の注文を聞いたり、注文した料理や飲食物(以下、特に断らない限り料理と略称する。)を受け渡す顧客担当者117がその頭部に装着して音声による応答を行うために使用される。雑音マイク113の拾った音はヘッドセット114から入力された音から所定の割合で差し引かれ、これにより顧客担当者117の入力した音声が周囲の雑音にほとんど影響されることなく明瞭に抽出される。無線移動局115の方は、顧客担当者117の腰に装着するようになっており、ヘッドセット114から入力された音声情報を無線でキッチン部102内に送出したり、キッチン部102から送られてきた無線信号を受信して音声情報を再生し、これを顧客担当者117に音声で伝達するようになっている。また、POSレジスタ111は顧客116の注文を基にして会計処理を行うようになっている。POSレジスタ111は、一般的に飲食用の店舗で広く使用されているもので、会計業務を主な機能とするものである。本実施例では顧客担当者117がこのPOSレジスタ111を従来と同様に顧客116と対応しながら手動で操作する。したがって、本実施例では特徴的な所は存在しいないので、その詳細な説明は省略する。

一方、キッチン部102には無線通信を行うための無線固定局121と、この無線固定局121と有線で接続された情報処理端末122と、この情報処理端末122と接続されたディスプレイ123が備えられている。調理担当者126は、ディスプレイ123を見て注文のあった料理等を製作するようになっている。情報処理端末122はパーソナルコンピュータと同様の構成の端末で、図示しないCPU(中央処理装置)が同じく図示しない磁気ディスク等の記録媒体に格納された制御用のプログラムを実行することで、このオーダリングシステム100の全体の制御を行うようになっている。また、この情報処理端末122は音声を認識するための図示しない音声認識ボードを備えている。音声認識ボードで認識された音声データは、前記した記録媒体に格納されると共に、この記録媒体に予め格納されている音声データと適宜組み合わせて加工や編集を行って、顧客担当者117のヘッドセット114へ注文情報として音声を出力するようになっている。

図2は、このような構成のオーダリングシステムの全体的な処理の様子を表わしたものである。このオーダリングシステム100で顧客116は顧客担当者117に対してメニューの中から注文する料理あるいは飲料(以下、単に料理という。)、数量および備考からなる注文情報を伝えることで料理を注文する(ステップS201)。ここで、「備考」とは、注文に対する顧客116ごとの個別の要望である。たとえばテイクアウトにするとか、飲料としてのドリンクに対して氷抜きにするとか、ハンバーガに対してマスタード抜きにするといった要望である。注文は口頭で行われ、これを表わした音声情報141が顧客116から顧客担当者117に空間を伝達される。

顧客担当者117は、顧客116から口頭で伝えられた音声情報141を耳で認識すると、この注文情報を復唱する(ステップS202)。このとき、顧客担当者117はヘッドセット114を用いて復唱した注文情報を表わした音声情報を入力し、これを無線移動局115から無線固定局121へ音声無線データ142として送信する。なお、顧客116はメニューの中の1つの料理ごとにその注文内容を顧客担当者117に対して伝えるので、1単位の明細部分となる1つの注文情報は1つの料理、その数量および備考について発生する(ステップS203)。顧客116が1つのオーダで複数の料理を注文した場合、それぞれが、1単位の明細部分となる複数の注文情報が発生することになり、その注文情報の数だけ復唱が行われることになる。なお、顧客担当者117は復唱時に注文情報の中の数量の発声を省略することができる。この場合には初期値としての数量“1”が入力されたものとしてシステム側の処理が行われる。備考についても同様に必要ない場合には省略することができる。

ところで、図1に示したキッチン部102の無線固定局121と情報処理端末122はオーダリングシステムの制御本体を構成している。この制御本体では音声無線データ142を受信すると、図1に示した雑音マイク113の拾った雑音を差し引いて、顧客担当者117の発した注文情報からなる音声を抽出し、この注文情報を前記した音声認識ボードを用いて音声認識処理し、これを基にしてタッチパネルディスプレイ112およびディスプレイ123の表示処理を行う(ステップS204)。この制御本体の処理については後に詳細に説明する。この制御本体の音声認識処理の結果として得られたオーダ情報143はタッチパネルディスプレイ112およびディスプレイ123に送られて、オーダ情報の一覧表示が行われる(ステップS205)。

調理担当者126はディスプレイ123の表示内容を視覚情報144として取得し、新たに発生した注文情報あるいは未着手の注文情報に対して調理を開始し(ステップS206)、調理が終了するたびにその料理をカウンタに置く(ステップS207)。調理担当者126はディスプレイ123の表示内容として未処理の注文内容が存在する限り、調理を繰り返すことになる(ステップS208)。これには、同一の伝票すなわち同一の顧客116が同時に支払う複数の料理を1つのオーダとして頼んだときに残りの料理が存在する場合の処理だけでなく、他の伝票すなわち別会計で処理される未処理の料理が存在する場合の処理も含まれる。

このようにして調理担当者126によってカウンタに完成した料理が置かれるたびに、顧客担当者117(注文を受け付ける者だけでなく料理を顧客116まで運ぶ者も含む。)はカウンタにその料理を取りに行く。そしてタッチパネルディスプレイ112における該当する伝票におけるカウンタに置かれている料理を示す情報の箇所(明細部分)にタッチパネルで触れる(ステップS209)。このタッチパネルの操作情報145は無線固定局121と情報処理端末122からなるシステムの制御本体に伝達される。制御本体はこれを基にしてタッチパネルディスプレイ112およびディスプレイ123に対する表示更新処理を行う(ステップS210)。この制御本体の処理についてもステップS204の処理と共に後に詳細に説明する。これによる表示更新情報146はタッチパネルディスプレイ112およびディスプレイ123に送られ、これにより顧客担当者117のタッチしたその明細部分の表示の背景が黒色から白色に、また文字の部分が白色から黒色に反転される(ステップS211)。これにより、同一の伝票番号のどの料理が終了したかを顧客担当者117と調理担当者126の双方が確認することができる。なお、同一の伝票番号のすべての料理の調理が終了した時点で、その伝票番号のすべての料理に関するデータがタッチパネルディスプレイ112およびディスプレイ123から削除される。
