- 約1%~30%w/wの食用固形物含有量を有する請求項1から請求項4のいずれか1項に記載の油性懸濁液。
- 前記食用固形物が、粉末相の糖質、塩分、香辛料、漢方薬、薬、ミネラル、親油性アミノ酸及びビタミン類から選択される請求項1から請求項5のいずれか1項に記載の油性懸濁液。
- 前記油が、中鎖トリグリセリド(MCT)油、キャノーラ油、ココナッツ油、ピーナッツバター油、パーム油、オリーブ油、魚油、ヒマワリ種子油、大豆油、又はこれらの任意の組み合わせから選択される請求項1から請求項6のいずれか1項に記載の油性懸濁液。
- 油性懸濁液の調製方法であって、
食用固形物原料粒子を担体油と混合し、これにより油-食用固形物原料粒子混合物を得る工程と、
前記油-食用固形物混合物の中の前記食用固形物原料粒子の粒子サイズを低減し、これにより油性懸濁液を得る工程と
を含み、前記油性懸濁液は約0.1~50μmの平均粒子サイズを有する食用固形物粒子を含む方法。 - 前記粒子サイズを低減することが、1つ、2つ、3つ、4つ又は5つの工程で行われ、各連続工程における前記食用固形物の粒子サイズが、任意の前の工程と比較して低減されている請求項8に記載の方法。
- 250μmより低い粒子サイズで前記食用固形物原料粒子を得る工程
をさらに含み、前記食用固形物原料粒子の粒子サイズを低減することが、
中間低減サイズの油-食用固形物混合物の中の前記食用固形物の平均粒子サイズを約100~0.1μmに低減し、これにより前記油性懸濁液を提供すること
を含む請求項8に記載の方法。 - 前記低減工程がマイクロフルイダイザで実施される請求項10に記載の方法。
- 250μm以上の粒子サイズで前記食用固形物原料粒子を得る工程
をさらに含み、前記食用固形物の粒子サイズを低減することが、第1の工程及び第2の工程を含み、
前記第1の工程が、前記油-食用固形物混合物の中の前記食用固形物の平均粒子サイズを約500~50μmに低減し、これにより中間低減サイズの油-食用固形物混合物を提供することを含み、
前記第2の工程が、前記中間低減サイズの油-食用固形物混合物の中の前記食用固形物の平均粒子サイズを約100~0.1μmに低減し、これにより前記油性懸濁液を提供することを含む請求項8に記載の方法。 - 前記第1の工程がフードプロセッサで実施される請求項12に記載の方法。
- 前記第2の工程がマイクロフルイダイザで実施される請求項12に記載の方法。
- 前記マイクロフルイダイザが約5,000~40,000psi(約34.5~約276MPa)の圧力で使用される請求項14に記載の方法。
- 前記マイクロフルイダイザが75μm~1100μmのチャネルサイズを有する請求項14に記載の方法。
- 前記油-食用固形物混合物が安定剤を含まない油-食用固形物混合物である請求項8から請求項16のいずれか1項に記載の方法。
- 前記油性懸濁液が、約1~30%w/wの食用固形物を含む請求項8から請求項17のいずれか1項に記載の方法。
- 前記油性懸濁液を追加の油又は高油分含有量の製品と混合し、これにより最終的な甘味製品を提供する工程をさらに含む請求項8から請求項18のいずれか1項に記載の方法。
- 前記油性懸濁液が、不活性条件下で、追加の油又は高油分含有量の製品と混合される請求項19に記載の方法。
- 前記追加の油が魚油であり、これにより前記最終的な甘味製品が甘味のある魚油である請求項19に記載の方法。
- 請求項1から請求項7のいずれか1項に記載の油性懸濁液を含む摂取製品。
- 甘みのある魚油である請求項22に記載の摂取製品。
- 約1~50%w/wの前記油性懸濁液を含む請求項22に記載の摂取製品。
