Claims (40)
- 約1000psiを超える押出圧力で約10%〜約15%の含水量を有する穀物前駆体を押し出し、約4%〜約10%の最終含水量を有する機能強化穀粉を生み出すことにより製造される機能強化穀粉であって、押出工程は、押出物の変化する圧力から発生する熱を超える熱の入力無しで行われ、押出後の水分低減工程無しで最終含水量が達成される、機能強化穀粉。
- 前記穀物前駆体は、全粒穀物、製粉された穀物前駆体、またはそれらの混合物を含む、請求項1に記載の機能強化穀粉。
- 前記穀物前駆体は、単一の穀物または2つ以上の穀物の混合物を含む、請求項1に記載の機能強化穀粉。

- 食品の栄養素およびタンパク質の利用可能性/消化性を増加させる際に使用するための、請求項1〜16のいずれかに記載の機能強化穀粉。
- 機能強化穀粉の製造方法であって、約10%〜約15%の含水量を有する穀物前駆体を約1000psiを超える押出圧力で押し出して、約4%〜約10%の最終含水量を有する機能強化穀粉を生み出すことを含み、押出工程は、押出物の変化する圧力から発生する熱を超える熱の入力無しで行われ、押出後の水分削減工程無しで最終水分量が達成される、方法。
- 前記穀物前駆体は、全粒穀物、製粉された穀物前駆体、またはそれらの混合物を含む、請求項22に記載の方法。

- 請求項1〜16のいずれかに記載の機能強化穀粉と、少なくとも1つの非穀粉食品成分とを含む、食品。
- 前記食品が、栄養素およびタンパク質の消化性の向上を特徴とする、請求項39に記載の食品。
