Claims (15)
- 50μm以下のD90粒子径及び8(重量/重量)%以下の油含有量を有する、コーヒー豆粒子。
- 30μm未満のD90粒子径を有する、請求項1に記載のコーヒー豆粒子。
- 7(重量/重量)%以下の油含有量を有する、請求項1又は2に記載のコーヒー豆粒子。
- 未焙煎及び焙煎コーヒー豆粒子から選択される、請求項1〜3のいずれか一項に記載のコーヒー豆粒子。
- 乾燥固形分の1〜50(重量/重量)%の量の請求項1〜4のいずれか一項に記載のコーヒー豆粒子と、乾燥固形分の50〜99(重量/重量)%の量の可溶性コーヒー固形分(重量/重量)とを含む、コーヒー組成物。
- 請求項1〜4のいずれか一項に記載のコーヒー豆粒子と、可溶性コーヒー固形分とを含み、前記コーヒー豆粒子が、可溶性コーヒー固形分の量の1〜100(重量/重量)%の量で存在する、食品又は飲料組成物。
- 請求項1〜4のいずれか一項に記載のコーヒー豆粒子を含み、前記コーヒー豆粒子が、可溶性コーヒー固形分の量の2〜50(重量/重量)%の量で存在する、食品又は飲料組成物。
- 乳タンパク質及び/又は植物性タンパク質を、乾燥固形分の2〜50(重量/重量)%の量で更に含む、請求項6又は7に記載の、食品又は飲料組成物。
- コーヒー豆粒子の製造方法であって、
a)コーヒー豆から油を除去して、脱油コーヒー豆を製造するステップと、
b)前記コーヒー豆を50μm以下のD90粒子径に粉砕するステップと、
を含む、方法。 - ステップa)を実施した後、ステップb)を実施する、請求項9に記載の方法。
- ステップb)を実施した後、ステップa)を実施する、及び/又は、ステップa)の際にステップb)を実施する、請求項9に記載の方法。
- ステップa)での油除去を、前記コーヒー豆の圧搾により実施する、請求項9〜11のいずれか一項に記載の方法。
- ステップa)の前及び/又は後、前記コーヒー豆を焙煎する、請求項9〜12のいずれか一項に記載の方法。
- 可溶性コーヒー製品の調製における、請求項1〜4のいずれか一項に記載のコーヒー豆粒子の使用。
- 請求項1〜4のいずれか一項に記載のコーヒー豆粒子を、可溶性コーヒー粉末と凝集させる、請求項15に記載の使用。
