1489166 Colloidal coffee concentrate GENERAL FOODS Ltd 7 May 1976 18931/76 Heading A2B A concentrated aqueous colloidal coffee fraction is made by forming a mixture of water and roasted coffee, colloidally grinding the mixture and removing from the ground mixture coffee particles larger than the desired colloidal size, adding to the resulting colloidal slurry, roast and ground coffee and water sufficient to give a water/coffee weight ratio of at least 3:1, colloidally grinding the mixture produced and again removing coffee particles larger than the colloidal size. The steps of adding coffee and water, grinding and separation may be repeated until a colloidal concentrate of required concentration is found, preferably 3 to 8% by wt. of coffee of particle size less than 10 microns.
