4). Evaluation of Physical Properties of Dispersion Medium The physical properties of the dispersion medium were tested for the relationship between shear rate and viscosity. A 3 mm thick gel was prepared on a plastic petri dish having a diameter of 5 cm and used for the test. The portion that protruded from the plate during measurement was removed. The measurement results are shown in FIG.

5.結果
表2において、総合評価「○」である(b)と(d)と(g)に着目して、分散媒の物性を確認したところ、せん断変形速度0.01 1/secのときの粘度が10〜300 Pa・sである溶液が含まれることが明らかとなった。
特に、ジェランガム0.025重量%水溶液や、ジェランガム0.04%、ペクチン0.0048重量%水溶液が適していることが分かる。
