ある特定の果実、特に、クランベリーには、他に例を見ない健康上の利益を付与する、プロアントシアニジンとして知られる(縮合タンニンまたはプロシアニジンとも呼ばれる)化合物クラスが含まれている。従って、プロアントシアニジン化合物(PAC)の選択的な捕捉および乾燥重量濃縮は、これらの化合物の他に例を見ない利益をもたらすことに関して、製品用途(例えば、小売飲料、トローチ剤など)の分野において新たな機会を広げる可能性がある。
限外濾過(UF)膜システムを用いて、PAC含有液体供給材料(例えば、クランベリージュース)を、PACが減少した浸透液の流れおよびPACが濃縮された保持液の流れに分画する方法が述べられる。基本的には、膜システムの名目分子量カットオフが適切に選択された時には、存在する高分子量PAC(および/または相対的に高い分子量のPAC凝集物)のかなりの部分が保持液に選択的に保持され、残りのいろいろな低分子量可溶性構成固体(例えば、糖、酸、アントシアニンなど)は浸透液として膜を優先的に通過する。従って、乾燥重量ベースで、液体の流れの中にあるPACを選択的に濃縮するための単純な機構が見出された。実際には、この方法を用いると、実質的に全ての、予め設定された特定のPAC乾燥重量含有率(例えば、5%、10%、15%、20%、30%、40%、50%、60%、70%、80%、90%、および98%)まで、抽出物を製造することができる。さらに、PACが分子量に基づいて選択的に分画されると、低分子量画分は浸透液として膜を通過し、高分子量画分は保持液として保持されるので、PACの単位重量あたりの生理活性が上昇した抽出物を得ることもできる。さらに、本明細書に記載の方法はまた、苦味のある低分子量非PACフェノール化合物を大幅に除去して、PACが減少した浸透液の流れに入れることができるので、小売飲料調合物(例えば、低カロリー等張飲料)に使用するのに潜在的に適した清澄化PAC抽出物を提供するのに使用することもできる。

Claims (16)
- (a)ある体積のプロアントシアニン含有液体供給材料を準備する工程;
(b)プロアントシアニン含有液体供給材料を限外濾過供給タンクに通す工程;
(c)限外濾過供給タンク内の材料を限外濾過膜システムに通して濾過して、材料を、プロアントシアニンが減少した浸透液の流れおよびプロアントシアニンが濃縮された保持液の流れに分画する工程;
(d)プロアントシアニンが減少した浸透液の流れを収集する工程;ならびに
(e)前記体積のプロアントシアニン含有液体供給材料が無くなるまで、プロアントシアニンが濃縮された保持液の流れを限外濾過供給タンクに通し、その後に、プロアントシアニンが濃縮された保持液の流れを収集する工程
