Description
本出願は2012年1月1日に出願されたオーストラリア仮特許出願2012900000号(その内容は本明細書で参照により組み込まれる)について優先権を主張する。
(a)匂い#3Aを超えるおよび/または飲料水に対して許容される閾値匂いを超える芳香/匂い成分要素;
(b)1cmのパス長を有する石英キュベットを通して測定した場合、研究室グレード逆浸透水の420nmおよび520nmでの分光測光吸光度の合計を超える見かけの色または吸光度;
(c)約0.1Bx糖を超え、または約0.005Bx糖を超え;および/または未処理ジュース中の糖の量より低い;
(d)飲料に適した飲料水に匹敵するものを超える、それ以上の顕著な味覚
(e)約50ppmを超える全溶解固形物(TDS);
(f)約600ppmを超える全有機炭素(TOC);および
(g)約0.5を超える、好ましくは約0.5NTUを超える濁度
のいずれか1つ以上を有し得る。
1.果肉、種、微生物、皮および他の固体を、0.45ミクロン以下の細孔サイズ、好ましくは0.22ミクロンの細孔サイズの膜を通す濾過により除去すること。好ましくは、この濾過は、任意で0.2ミクロン直径の細孔サイズを有するクロスフロー濾過ユニットである。

搾りたてのオレンジジュースは単純に、セラムまたはプラズマ中に懸濁される固体を含む。組み合わせて、ジュースにはその色および味覚が与えられる。しかしながら、ルーチン的に、瓶詰めのためのジュースを調製するため、および稠度のためにジュースが有する固体の量を低減させることが一般的である。固体を低減させたにもかかわらず、ジュースは普通のオレンジジュースのように見える。そのようなオレンジジュースは、その低下した固体パーセンテージに関係なく、0.45または0.22ミクロンのサイズを通す濾過により滅菌することができず、他の形態の処理を必要とする。
1.特にジュースがph=4.6を超える場合(すなわちニンジンジュース)、プラズマからの固体の分離を改善するために、ジュースを酸性化すること。
2.プラズマからの固体の分離を改善するための高速遠心分離またはデカンティング。
フレッシュオレンジジュースは、分画して、主にグルコースおよび果糖を除去することができる。これを行うために、生フレッシュジュース中の固体を低減させる必要がある。これは、ジュースを沈殿させる(上記実施例1)またはジュースをメカニカルセパレータ、例えば遠心分離機またはデカンター(Westfaliaセパレータ)により加工することにより実施することができる。固体は、分画されたジュースの後の再構成のために維持される。
上記実施例から、画分4は元のオレンジジュース由来の150ダルトン未満の分子サイズであり、著しい糖量(あれば)を排除した成分要素を含み、これはさらに加工することができ、瓶詰めに好適な、ミネラル、フルーツ酸に富む飲料に適した飲料水を生成させることができる。
以上で記載されるこの画分4はまた、他の個々の画分と活性炭処理前後のいずれかで再び組み合わせることができる。200〜2000ダルトンの間の分子サイズの成分要素を有する画分2は、主にオレンジ果実のビタミン、植物栄養素および抗酸化物質を含み、大部分は水性の画分4に任意の割合で添加することができ、低カロリー栄養水が製造される。
Claims (7)
- 植物由来飲料製品またはプロセス中間体を調製するための方法であって、
植物ジュース濃縮プロセスの副産物である、可溶性成分を含む植物材料の粉砕または液化抽出物を提供する工程と、
前記抽出物を、200ダルトン未満の分画分子量を有する第1のサイズ排除精製手段および90ダルトン超の分画分子量を有する第2のサイズ排除精製手段に順次的に曝露して、前記抽出物の成分を分子量に基づいて3つの画分に分離する工程であり、第1の画分は200ダルトン超の成分を含み、第2の画分は、一つ以上の90ダルトン超かつ200ダルトン未満の成分を含みかつ前記抽出物のグルコースまたは果糖の大部分を含み、第3の画分は90ダルトン未満の成分を含む、工程、並びに
前記第1の画分および前記第3の画分をブレンドし、飲料製品またはそのプロセス中間体を提供する工程であり、ブレンドされた前記第1の画分および前記第3の画分が前記抽出物の非糖ミネラル成分の大部分を含む、工程と、
を含む、方法。 - 前記第2の画分の成分は、糖、タンパク質、タンニン、フェノール、芳香族分子、味覚に寄与する分子、酸、微粒子および油からなる群より選択される、請求項1に記載の方法。
- 前記第1の画分及び前記第3の画分の成分は、ミネラル、ビタミン、水、抗酸化物質、植物栄養素、植物化学物質、芳香族分子、および味覚に寄与する分子からなる群より選択される、請求項1または請求項2に記載の方法。
- 前記第1のサイズ排除精製手段または第2のサイズ排除精製手段は、ナノ濾過、逆浸透、限外濾過およびクロスフロー濾過からなる群より選択される、請求項3に記載の方法。
- 前記第1のサイズ排除精製手段または第2のサイズ排除精製手段は、ナノ濾過である、請求項3に記載の方法。
- 前記製品またはプロセス中間体を活性炭またはゼオライト、あるいはAmberchrom(登録商標)樹脂または機能的に等価な樹脂に曝露する工程を含む、請求項1〜5のいずれか一項に記載の方法。
- 植物材料の前記液化抽出物は濾過透過物、または蒸発または凍結により生成された低糖ジュースである、請求項1に記載の方法。
